Pressure Canning Whole Eggs for the pantry! *NOT a G0v+ approved method

Pack clean sterile jars with clean fresh eggs.
add 1 tsp salt per jar, top with water to 1" headspace.
Pressure at 5 lbs. pressure for 5 mins (and NO MORE). Immediately remove from heat and let canner de-pressurize for at least 1 hour. Remove jars carefully and allow to cool for 24 hours.

    Just throwing this out there... I know canning milk is also a NON approved thing but I do and it lasts a long time. I was wondering if maybe doing these similar to milk where you shut it off after venting and let the pressure come down would help with the color issue. I wouldn't be afraid of these as long as they sealed and when opened and shelled they smelled okay and didn't taste odd. Thanks for getting me thinking on this anyway...smiles!

    I just heard of canned eggs today and found your video when I did a search. the Facebook poster said she water bathed for 10 minutes. Your video is interesting. I was thinking of trying the pressure canning but seeing how they came out overcooked maybe water bathing would be a better fit for eggs. Love the idea!!! Thanks for sharing!!!

    You can still pressure can them, but reduce the time which would make them not be overcooked. I am working on it and will do a follow up video in the future. We always have eggs so no shortage there. 😂

    Make sure you watch to the end. I think next time I'll just let it come to pressure for 1 min and then turn it off and take the jars out as soon as the valve drops.

    Love it! Great work! I'll try it with less time, like someone says 3mins since the pressure cooker cooks in less time. My opinion is that the us... established rules help but experienced reliable sources are better.

    @@patriciaellen09 I would not think that the age matters. If you're looking to getting into canning milk, get on the Facebook group called The original rebel canners, they do a lot of that stuff on there. I won't be canning milk at this time, I plan on freeze drying it.

    Oh my god I didn't even know this was possible. I'm new to canning over the last year or two. And I can't get out of my apartment for 6 to 8 months out of each year due to a medical condition and cold weather. So I try to find ways to Stuck up on things that I like and eggs are one of them. Thank you so much for doing this video.😊 I also wanna say I love your egg, salt and pepper shakers and your stove they are so cute. I know this may be kind of a stupid question. But can you store-bought eggs for this as well? Like I said, I'm really new to Canning.

    Oh wow, that's a long time to be stuck inside, I'm so sorry! My daughter just bought those shakers for me and the chicken spoon rest that I don't have in this shot, lol. I'll tell her you noticed them 😁 I'm sure you can use store bought eggs because once they go in the water, there's no difference in them from the farm fresh eggs. It would be like the difference between boiling store bought versus farm fresh, technically no difference in processing. There's going to be a lot of debate on here about this and that's ok, I understand. I do things safe for my family and let others decide whether they want to do it for their family or not. I follow standard rules, not specific recipes. This is the first "off the books" kind of canning I've done, so the comments I'm sure will hit the ceiling, lol. If people don't feel it safe, so be it, that's their choice. If anything happens I will be sure to update! Thank you for stopping by and watching!

    The USDA has not done ANY testing on canning since the late 50s early 60s. All the new rules since then come from the company that owns Ball canning jars. By the way, I was wondering if you could test and see if whole fresh eggs can be preserved in a brine solution? Kind if like waterglassing. I would test it myself, but I can only get store bought eggs. So I just pickle them.

    I'm not sure what you would want to accomplish by preserving whole eggs into a brine, BUT I would be further afraid mostly that the vinegar (acidic) solution would break down the shell and disintegrate it fairly quickly, then you would have a mess! Waterglassing is in lime, which is a form of calcium (or alkaline) basically so it doesn't break the shell down. I do think it's funny how most everyone that "follow the rules" to a T will say that they don't rebel can or will NEVER do anything that isn't approved, but they will be the first to say that they use Ball recipes to can, which are not always FDA approved either and they don't realize that they are actually still "rebel canning" LOL. I just laugh....They don't even know what they are being "sticklers" to.

    Nothing is wrong with them. This stores them long term in a hard boiled state. I will adjust the cooking time on my next batch because they are a little over some and a tad dry

    I like to rebel can and my only gripe is the timing isn’t long enough to kill botulism on the outside of the egg. To feel safest I’d want to do the same timing for raw pack meat but that’s going to ruin the eggs for consumption for sure. Remember to steam vent the canner for 10 min prior to putting on the weight. Be well ❤

    @@BootsandBountyHomestead I saw it on the national center for food preservation how to can section. I’m genuinely just trying to have a conversation just so you know. Venting is part of the process that to me, seems logical to keep doing. As I mentioned we do break some rules but we do so with intention and while being well informed. The 10 minute vent allows the canner and contents to come up to maximum temperature. It’s a temperature where after adding the weight, the canner can then achieve at least the temperature needed to kill botulism. In this case the botulism would only be on the outside of the egg so I like the process in theory, but this exact practice gives me concern that botulism could indeed thrive if present. I’m stating why this process would concern me, even as a rebel canner. It’s important to have constructive conversations like this so we can get good information and techniques into peoples’s hands. We can up previously boiled and peeled eggs, but they are pickled. I know that’s not what you’re going for but I think that’s what we will stick with personally.

    I love the title. They look overcooked. They have a good shelf like raw, it you can stop the yolk from turning green these would be great to use to make pickled eggs.

    I cant help but wonder if like water bathing would work i like to rebel can push the envelope LOL like bring it to a rolling boil then maybe just shut the heat off kinda like open kettle method ish but they actually go into boiling water just at the tipping point

    If this was to be waterbathed, I would do it for a while, maybe 20 mins because it's got to hold the heat consistently throughout to heat the egg enough to cook it, know what I mean?

    Mine were fresh-ish, within 5-7 days, room temp. You can use cold eggs, it might actually work better with the cooking time! Didn't think we that! I might have to try that as an experiment to see if it works better.

    I've never heard of canning eggs before, I have canned butter and milk before. Woman were canning long before Ball Books came out. My Grandma canned sauce and never pressure canned or water bathed it, she just cooked the sauce and put the hot sauce in a jar and put a lid on it, covered it with blankets for 24 hrs. It sealed and lasted for years. Let us know what you come up with and what works.

    I don't imagine that the vinegar would do anything, these were just cooked too long, that's why they turned "tan" on the inside. I wouldn't use any kind of acid in it because it may start to break the shell down over time.

    Ive seen this on social media too, im curious if you dont have to worry about botulism as long as the shell doesn't crack. I wouldn't think the spores can penetrate the shell.

    Some will crack just like they do when you normally boil them, I believe I showed this in the video. The shells are porous once the bloom is removed, so once the shells get wet, the pores are open. I don't know much about botulism because growing up doing all of this canning in my family, we had never even heard that word until I started watching KZread a few years ago, and then everyone was talking about it, lol. In my opinion, once it's all heated above boiling, it would be hot enough to kill any bacteria inside the jar. I would think you would only have to worry about it if the seals leaked or you stored them in inadequate climate conditions, but don't hold me to it. I've never had an issue with it and I've done this since I was old enough to stand on a stool and help pack jars 😂 I'm going to do follow up videos at 3 mths, 6 mths, and 1 year to see how they do.

    I wonder if its better to take the shell off only because i think of the instant pot concept i get beautiful non discolored eggs hard boiled eggs in 8 mins immediate toss into ice bath and peel but i mean you cant can eggs then throw them in hot water it seems like the process of cooking is gonna be hard to "stop"

    Yes it is hard to stop the cooking process. Next time I'm just going to let it come to pressure and then cut it off, I'm not going to pressure for any amount of time. Hopefully that will be better. If you took the shell off, it would be kind of hard to get them out of the jar because you would have one solid loaf, like you said in the instapot. I do the egg loaf in the instapot as well. I don't know that I would want to do it in a jar though, it would be a pain in the butt to try to get out 😂😂

    @@tclodfelter8789 you should always use any kind of non-iodozed salt when canning or preserving. I use Redmond's real salt for everything so I don't buy anything extra. No one should use table salt for anything, even at the table, EVER 🤣 that stuff is BAD (in my opinion of course) 😁 Thanks for watching!

    I heard that when you hard boil an egg and leave the shell on it and store it in the fridge the hard boiled egg lasts for a long time. I don't see why this wouldn't work.

    Of course that will work but there will be times you may be camping and not have a frig or electricity going out and they would all go bad.

    Correct me if I'm wrong, but that was not a pressure canner that was a pressure cooker. Those eggs were not canned they were just cooked in jars???

    Yes ma'am, it is a presto 16 qt pressure canner that I used, it was actually my grandmother's that I grew up using with her and my mom, and yes they are "canned". Not sure why you think they're not. Let me clarify, Pressure Canners can "cook" large quantities as well for immediate consumption such as soups and meats, but pressure "cookers" cannot pressure "can" without being specifically designed to be a cooker AND canner, because they have to have pressure regulators on them (mine do not have the gauges because they are old, before gauges were put on them. I grew up learning to listen to the hiss, not watch a gauge). If the pressure can't be regulated, jars will explode. There's different pressures that are needed for different foods and elevations to become shelf stable in the canning process. And you have to be able to adjust the temp while canning because the top can explode off the canner when it's not regulated, hence why everyone is so scared of canners, they forget to turn the temp down and it keeps building pressure until it explodes. When you think about it the way you said, what you are saying is correct and also the same ideology. Let me explain. Yes, when you pressure can foods in jars, they are cooked, but they are sealed with a preservation agent such as salt, sugar, or vinegar to preserve for long shelf storage, that's the point of canning, preserving food for later. It's the same cooking process as pressure cooking only you eat that food immediately, such as chicken in an instapot. Same concept, different end product for consumption. Hence, what I did was hard boiled eggs in jars thru the canning process that can sit on the shelf for months or even years because they are preserved in salt water and sealed so no bacteria can enter, when stored correctly. You can't just put boiled eggs in jars, fill them with water, slap a lid on them, and sit them on the shelf, they will go bad, they have to be sealed and preserved by the canning process, through time-temp-pressure regulators. If the jars do not seal, you would need to put them in the refrigerator and eat them within the next couple of weeks. These Could possibly sit on the shelf for over a year. I'm going to do follow-up videos in 3 months, 6 months, and one year to show how they stored. There are no "federal safety guidelines" for this, so it's called rebel canning. Hope that helps you understand the difference.

    Also have presto pressure canner that does not have gauge only weight, when you pressure can food you are cooking the food in the jars

    Also. If you have a pressure canner with a gauge you must have that gauge calibrated at least once a year.

    Yes, that would be correct. I do not do the 10 minute vent because that's not how I was raised to can but if that's how you want to do it then that's fine. If you watch the whole video, you will see that they did overcook. I'm going to be trying some different techniques in future videos coming soon to see if I can perfect it. So stay tuned

    Nope wouldn't do it. There's no way they'd reach the temperature of 240 degrees needed for low acid foods. 240 MUST be maintained for a period on average 75 to 90 minutes for most low acid foods. This is dangerous!

    @@andreawhisenant2718 well, it's two different things, but I totally agree. Water glasses preserves the raw eggs in lime water by sealing off the pours in the shells. Pressure canning eggs cooks them and that's where the "conflict" comes in to the whole acidity versus time and temp for preservation. That's why I wanted to do this experiment. I don't have a commercial kitchen nor the access to labs and tests to confirm anything, but neither did they "back in the day" and did things like this that would otherwise be "against the rules" lol.

    Water glassing makes them acidic. I believe pickled eggs can be canned, (if you like pickled eggs) the vinegar makes them acidic. @@andreawhisenant2718

    Unless there is a botulism spore inside the egg I think it will be ok 😅 I mean people boil eggs at 212° and eat them without a problem. Just because something isn't tested doesn't mean it's not safe. It means it's not tested. Also, I find it odd that most people who say things aren't safe because the USDA says so don't follow the USDA rule about having the dial regulator tested. They may be canning with a regulator that isn't calibrated. That's not safe. Rules for Thee but not for me... I don't have to follow the rules but you do. Also, the USDA says to heat food up in an open vessel before eating and it will kill botulinum toxin. So, do that and IF they had a botulism spore inside and IF it released toxin before it died, then heating it to boiling will kill it. Also, almost every time I boil eggs in my instant pot I get the tan eggs. I have seen KZread videos on canning eggs but I have not done it. I boil eggs and keep them in the fridge for hubby's lunch

    Whew, preach!!!! 😂 You know I see so many people "only using ball recipes" from the ball canning book...did you know they aren't all USDA tested and safe? I laugh when people say those things, then don't realize they are rebel canning, lol. But you can't tell them otherwise! What if I don't like the FDA/USDA recipe, maybe I think it's gross, so what does that mean for me? Either I don't can that particular thing, or I don't eat it ...um, no! It means I make my own recipe and follow the longest processing time for the items in my recipe 😂 they have recipes, them they have individual ingredients guidelines. People don't understand the difference either and that just makes me slap my forehead 🤦🏼‍♀️ anywho, people will do whatever they feel safe and I hate that they will miss out on so much goodness 😂 Thank you for commenting!

Yes, the canning books in the eighties when they changed some of the cooking times say in mixed vegetable recipes and in soup recipes to cook for the time the longest ingredient calls for. I don't think the canning times have changed since then. It was in the eighties they lengthened fish times. I also have noticed some veggie times were shortened. Go figure.

    That's what I made the disclaimer, this is not approved, but it's also not tested by the USDA/FDA either, so who knows if it works or not? I just want to share my experience and if you don't feel it safe, that's ok, Don't do it. I understand. And I'm NOT new to canning. I've done it all my life, that's why I feel it safe to try this. I just want to share for ones that may be interested, new or seasoned. Thanks for stopping by!

    From what I have been told and learned with canning, adding salt to food doesn’t preserve the food. It’s simply for flavor. Pickling lime is to protect the shell of the egg from bacteria entering through the shell of the egg. I am going to try water glassing about 7 dozen eggs this evening. Your idea for pressure canning the eggs has much potential tho and I think with the right canner and some tweaking it can be done. 👍🙏😊
