Pressure Canning Seasoned Bone-In Chicken! Fast Food!

In this video I am canning leg and thighs with seasoning. This will be perfect for soup, h omen and dumplings and many other recipes!
I am basing this recipe on Ball’s chicken and gravy recipe. You can add your favorite dry seasonings and the recipe is safe.
This recipe needs to be pressure canned to be shelf stable and safe.

    This makes the most amazing chicken and dumplings ever! It's a bit slimy taking out the bones but so worth the extra effort. I dump it in a pot, remove the bones and skin. Heat it up and thicken the broth. Add a home canned pint of peas, a quart of potatoes, a handful of frozen peas. Bring it to a simmer. Add dumplings and let them cook. In a pinch, quarter up a small can of canned biscuits and use them for the "dumplings" in it. So much yum and comfort food in mere minutes 😊

    I really should revisit this canning bone in chicken. When I was newly married, my MIL taught me to can this (of course she used water bath; she didn't know the new regulations). I was just so grossed out by the gelatinous mess and having to pick through all the jar to get the skin/bones/gristle out that I did end up throwing it all away! It was just nasty to me. Well, now that I've raised kids and grandkids, not too much can gross me out lol! I now I KNOW the goodness in that jar!

    I bought some frozen leg quarters at my local WinCo grocery store here in Missoula, Montana. Ten lbs for $8.99, at least that was the price late last year. I manage to get 5 quarts of raw pack legs and thighs. U cut the backs off of the thighs and put 5 back sections in each of 2 quart jars then fill those 2 jars with cool water. I get 2 quarts of bone broth along with5 quarts of bones in chicken for a full pressure canner load of 7 jars. I've made chicken vegetable soup or chicken chili really fast. Thanks for your video!

    I just watched you video and I love this. We went to Aldi about a month ago and found leg quarters on sale for 49 cents a pound. We came home with over a hundred pounds of it. I know we have canned Ugly Chicken and have been wanting other things to can with all of this chicken. This and your sweet and sour chicken recipe will be on the next canning chicken day.     I love canning this way! I will sometimes add carrots so that when I open it I can add pasta and make chicken noodle soup.

    Chicken Tetris lol. I am glad you showed the jar with no added liquid to compare with the others. I would think adding the liquid would then somehow result in too much and cause siphoning. So it was good to see side by side comparison.

    Perfect. Renee they will have pink in them and will be fine. First time I did mine, freaked out thinking they had not pressured or "canned" correctly. And your jar with just some broth? I have had some with less broth and they were okay. I label it #1 with marker, use it first in my chicken and noodles. We love ugly chicken and easy chicken. PERIOD!

    My husband does that! He thinks it isn’t cooked. I love all the proteins canned. Pork butt roast is amazing. Best pulled pork

    greetings. I'm not thrilled with white meat canned, but I love dark meat. Sometimes when I buy thighs the thighs are so big so I cut a chunk off each side. I pack jars first with the meat with the bone and than use the meat pieces to fill in the sides. Usually there isn't more than 2 bones in each pint. Other times I will debone the meat and just can the chicken. It depends if I need bone broth. Ugly chicken is the best for Fast meals.

    It is the best! We prefer dark meat in many recipes! Great idea on adding the chunks to fill the jars

    Renee my son lives on 9 acres it’s a farm 2 horses 3 cows chicken are coming soon he has a small barn and most of his land is fenced

    I absolutely love it. It works great on my stove. isn’t too heavy and easy to maintain. I like that I can double stack in this one. I might add a smaller one in the future for small batch canning

    The light up decoration with the deer? I got it at a local gift store inside Ace Hardware a few years ago. It eats batteries lol. But we really enjoy it

    Yes!! It is less for chicken with bones which seems weird to me but all the resources say the same times
