Preserving a 50 Pound Pepper Harvest

Pickling pepper brine
4 cups water
4 cups of distilled white vinegar
1 whole head of garlic
2 tablespoons whole peppercorns
1/2 cup pickling salt
1/2 sugar
Hey Ya'll, welcome to our little hobby farm. I'm thrilled you're here! I hope you'll find a comfy chair, a cup of something hot and wonderful, and spend sometime with us.

    I love seeing what you make with these big harvests . So much work goes into gardening, harvesting, and then preserving that most people didn't even think about .     @@shannonklump1643 3 cups chopped hot chili peppers - You can use a mix of peppers if you’d like anywhere from mild bells to superhots like Morugas or Scorpions, though I like to keep the thickness of the peppers about the same so the overall consistency is even. Lean toward hotter peppers. For this, I used some sweet Italian peppers but included a couple ghost peppers. 3/4 cup white wine vinegar 1/2 cup sugar 2 cloves garlic chopped 1/2 small onion chopped 2 teaspoons yellow mustard seed Salt to taste i used pepperonchinis

    You dont need to flash freeze the peppers after cutting . I just put them in freezer bag directly, and when i need to use some of them i gently hit them on the counter top they will immediately break apart

    It makes it easier for me to section them into smaller bags with specific cup measurements.

    I just LOVE watching your videos. So very informative. I have a question...when you harvest the green peppers first, do you harvest every bit of those green peppers, even the small baby ones?

    I'm so glad to hear it!! I will occasionally, depending on my mood. I don't like to harvest them to small to be able to use for the most part, so big enough that they have some purpose in the kitchen 💚

    Good morning! Curious if you’ve ever made smoked paprika? Trying to out how to do this. That is becoming my favorite spice to use. Amazing in egg salad❤.

    We haven't made it ourselves yet, the process is fairly simple though! I have my eye on an electric smoker and am hoping it goes on sale on prime day 🤞🏻🤞🏻

    Another great video! I was wondering how you can get enough peppers to make hot sauce when they don't all ripen at once, thank you. Is there a way to keep jalapenos fresh longer for candied jalapenos when I don't have enough?

    Thank you! I will store them in an airtight container in the fridge if I am trying to store them for a few weeks. I hope that helps! I typically have the opposite problem, where I am going, "do I really need this many jars of cowboy candy?!" 🫶🏻

    Do you bother trying to isolate peppers to save seed from, or have you found that cross-pollination really isn’t a problem?? Enjoy your videos!!

    Its very rarely been an issue! I do try to block plant (several of the same variety in one area) and save seeds from the middle plant but everytime we have gotten a cross pollination its been a fantastic hybrid that I wish I had more off 😂

    can grow not hot varieties, its what i do , i LOVE jalepenos flavor but not the heat. so i grow Nadapenos, they also have Habanadas and some other ones too

    With refrigerater pickles the heat mellows a bit at least in my experience 🙂

    I've found ways to increase the heat but have not yet found a way to decrease it 😂 In truth, we made Jalapeno popper grilled cheese sandwiches and they barely had any heat last night (the cheese and other dairy reduced the heat level, as well as cooking!). And we used HOT jalapeños. But just fresh? I have not found a way to decrease the heat yet!

    Paprika is made with red bell peppers and it's really just used to carry a smokey flavor and red color. Thats what sets it apart from being chile powder. Hints Mexicos powders being called guajillo, ancho, Chipotle, casabel, etc. Every chile can't make paprika.

    Sure, you wouldn't want to use traditional chiles in making paprika. But for general purposes using any variety of sweet red pepper will make a basic paprika. Guajillos, anchos, chipotle peppers, etc are all peppers with heat. It may be mild (in the case of ancho) but they still have heat. Your general paprika however (unless specifically listed as a spicy paprika) can be made from almost any non-spicy sweet red peppers. A txorixero pepper for example is very commonly used to make sweet paprika, and you can buy seeds from baker creek if you'd like to make it yourself. 😉

    ​@ShepherdingPeppersFarm oh I know what peppers are which lol thats why i broke that down. I have ten acres, like 2.5 acres of just peppers. We ranch. I'm saying taking any red pepper as you said and dehydrating and grinding it down, doesn't make paprika. It makes different chile powders. And thanks for the seed tips, we save seeds generationally, dry chiles by smoking and ristra.
