Potato Salad
Ingredients:
6 Medium - Russet Potatoes
3 - Hard Boiled Eggs (2 - Finely chopped and seasoned with Salt and Pepper, 1- Cut in slices)
1/4 Cup - Sweet Green Peas
1 Cup - Sweet Peppers (Mixed colours - Finely chopped)
2 Tbsp - Sweet Onions (Finely Chopped)
1 Tbsp - Celery (Finely Chopped)
1/2 Tsp - Paprika
1/4 Tsp - Black Pepper
1/4 Tsp - Garlic powder
Pinch of salt.
Dressing:
1 Cup - Mayo
1Tbsp - Dijon Mustard
1Tbsp - Honey Mustard
1Tsp - Honey
1/4 Tsp - Lemon Juice
Pinch of salt.

Steps:
1. Peel, cut the potatoes into cubes, and boil till fork tender. Set this in the fridge to cool.
2. Prepare the dressing using the ingredients in the Dressing section.
3. Add the chopped eggs to the cold potatoes and mix well to assemble the salad.
4. Add the peppers, onions and celery and mix well.
5. Add 1/2 of the dressing and stir gently.
6. Add salt, pepper, paprika and garlic powder.
7. Mix gently with the peas and the remaining of the dressing.
8. Transfer it to a serving container, and decorate it with the cut eggs and Paprika for colour.
