Potato Cakes. Using Leftover Mashed Potatoes.

These Potato Cakes are so simple and delicious and a great way to use up leftover mashed potatoes. Potato Cakes can be eaten for breakfast, lunch, a snack, and make a wonderful side dish.
Kids also LOVE potato cakes! I also love that you can add a wide variety of ingredients to give them your very own twist.
Basic Potato Cake
Ingredients
2 cups mashed potatoes
2 eggs
1/2 to 1 cup of flour
vegetable oil about 1 cup just enough to shallow fry the cakes
1/2 cup of additional flour to dredge cakes in before frying
Other Ingredient Options
1 Tbsp of dry ranch seasoning
Meat: diced ham, crumbled bacon, crumbled sausage, chopped turkey,
Cheese: shredded cheddar, shredded mozzarella, shredded gouda, shredded colby jack
chopped green onion or chives
sauteed onion and peppers
chopped asparagus
Instructions
In a bowl combine mashed potatoes, eggs, and flour. Add enough flour to form a patty, the mixture should be slightly sticky. Stir well. Place about 1/2 cup of flour on a plate, form mixture into cakes and dredge in the flour. In a large skillet heat oil on medium heat. Once oil is hot place floured cake in oil and cook for a couple minutes on each side. Cakes should be golden brown on each side. Top with sour cream and chopped green onion.

    Mom used to cook these for me as a kid.Im an old geezer now & wanted some of these but didn't know how to make them.After watching 3-4 vids on how to make these I tried your method.     I just made these for the first time ever and a Little bit of advice for anyone, someone like me. Use less flour! Whole cup of flour in the egg and mashed potato mix was way way too much, to then put it on more flour. Also add more seasonings, spices flavoring to ur egg potato mix because all that flour easily takes it away and left mine really Bland. Super happy I found this easy recipe! Going to have fun tweaking it just a little to suit my family's needs. Thank you

    My Grandfather was orphaned at 4 after his Father died leaving his Mother with 9 children. It was the Great Depression . He found good employment as an adult but he never wasted a thing and when there were leftover potatoes you knew what was for snack that night. I sure loved those things. One of these days I might try to make me some now that I know how 🙃

    Your original recipe was enjoyed by me, prepared by my papaw in the mornings post holiday visits beach home to WV. They are, in my opinion, the best way to enjoy potatoes. As a child, I only tolerated mashed potatoes, however these were my favorite way to enjoy potatoes and still is.     Great recipe, you can make these without the egg and flour in the potato mix if you prefer a lighter version I only use it to coat my tatties before I fry them

    Tried this recipe using boiled potatoes carrots peas green beans corn sazon Goya and a little adobo seasoning with cumin I mixed with egg and bread crumbs came out so good topped my cakes with salsa

    OK, just got through trying this. Like so many other things, experience counts for a lot and this one really does need some experience. Especially for someone who does not know how to cook (like me). I had some leftover mashed potatoes that I cooked with skin on because I prefer them that way and didn’t think it would make a difference for patties. I did pretty much everything as the video showed but had previously added some corn because I thought that would be good. The things that made it to the skillet would have changed the gorgon to stone. Those deft movements with the hand cannot be duplicated, I guess you just have to learn how to do it. They looked more like Apple uglies. Tried one on my son and he said, and I quote, that tastes wrong. Kind of sums up my cooking skills. Maybe I’ll stick with the microwave for a little longer.

    I would’ve swore this was another Great Depression idea my grandmother, and great Gma, came up with, but I guess not.😂 I never thought to ask her how she made them before she passed.     This recipe originated from Ireland just after the famine. The Irish version is called Boxty. Try making boxty, in my opinion boxty is far more tasteful

    You didn't mention the heat setting and the time range to flip. Lifting many times to guess if brown will possibly break up the pattie

    To be HONEST I was actually dogging her but after watching this video, she made potato cakes which I did try, and I must say were FUCKING DELICIOUS!!! I am sorry for the language and the doubt. This left over potato cake recipe was AWESOME!!!

    Too much egg. Had to add too much flour. I'd say 1 get per 2 cups of potatoes.
