Old Fashioned Potato Cakes - Potato Pancakes

Old Fashioned Potato Cakes - Potato Pancakes
2 cups mashed potatoes
1 egg
3-4 Tablespoons All Purpose Flour (stiffer cakes need up to 1/2 cup)
Using a medium bowl, stir together the mashed potatoes, egg, and flour. If your potato mixture is too thin, or you just want it stiffer, you may increase the flour up to 1/2 cup.
Form mixture into four patties and fry in hot oil until both sides are golden brown.  Serve while warm.

    Beat up the egg BEFORE you put it into the "Taters." You can use any leftover vegs to the "Spuds." Something that is really good is the addition of as much grated onion as you want, with as much crispy, drained, chopped up fried BACON up as you like. Great with fried eggs for any meal you want it for, even a snack. If you go out camping, take along a couple boxes of the Instant potatoes. That makes life a wee bit easier. I grate my onion because there is more flavor with the juice it will produce. I have found that the Purple onion is, in my opinion much tastier than a yellow or white, because it has a smooth sweetness. I also use the Idaho potato grated up which I think is even better than the mashed. Both of these recipe's go back to before the Civil War.

    My German grandmother made potato cakes from scratch on Wednesdays. We would make potato fools of ourselves. These look so similar but a lot easier. No grading raw potatoes! This is real comfort food when you are feeling bad. I will certainly give this a try. My grandmother called these Plinzen. Nothing better than these.

    I really like the "waste not, want not" philosophy! My mom always reheated leftovers for an easy extra meal, which became even quicker when we got a microwave oven. We also scraped our plates into a plastic container with a lid kept in the refrigerator to take over to Grandpa's farm for the cats in the barn.

    I'm 69. My mother made these when I was VERY young but she added chopped onion most every time. As an adult I've thought that these would make an excellent sandwich of any kind.

    Tom and Melissa, have you ever made mashed potato dumplings? Equal parts potatoes, egg, and flour. Mix and form golf ball sz balls and simmer in boiling water till floats!! So good with pork and gravy😋❤️

    I believe potato cakes from leftover mashed potatoes originated as a "struggle/hardship" way of using up everything and became very popular during the Great Depression. My grandmother also used mashed potatoes to make Potato Candy.

    My mom used to use mashed potatoes and icing (confectioners) sugar, and food colouring and various flavoured extracts to make homemade chocolates. You can tell by the ingredients that it was a long time ago! But they were affordable, and we enjoyed them.

    Love potato cakes. My Mom always used up the left over mashed ones. She added finely chopped onion, celery and dash of garlic powder. Her Mom Scotch-Irish and that’s how she was taught. Good with anything you add. Adding cooked ham or bacon…..even yummier! Thank you for sharing the basic recipe, reminded me to whip some up! 😊

    ❤ SNAP! We make our tatto cakes the same! Only difference is I fry the bacon on purpose to add to the cakes and then stir up the cakes with the additions as noted in the rendered bacon fat... Nothing goes to waste. Sending love 😊

    I note the careful pronunciation of po - tay - toe cakes. I come frum the mountains and that seems a bit citified to me. After all, they're just tater cakes, and I love 'em. Thanks for the video! Imma gonna have to make a batch 'fore long, soon as I can get around to it.

    ❤❤❤ my Mom came from Peru, Indiana. my Dad came from Kentucky. Both of them would use cold mashed potatoes, formed into a patty, then fried in butter, in a cast iron skillet. They were so good. ❤❤❤

    I just made potato cakes for my grandson this morning. I use the left over corn from the night before, if I have it. My husband has not ever had them. I don't follow a recipe I measure everything from the heart. And this morning they thoroughly enjoyed a good old fashioned breakfast. These are also fabulous sultry. But for breakfast maple syrup or Mrs. Butter-Worths. I played this video just to show them I didn't come up with them all by myself. Love the history you shared of your youth. It is definitely a taste of childhood. I hope I remember to do this for the grandkids often enough. ❤

    I'm 79 and my mom was from Texas. She made potato cakes for breakfast sometimes. Way too much mashed potatoes is the right amount. Anything less and you risk having no potato cakes for breakfast. I've never been able to make good ones because I wasn't;t sure how much flour is optimal. Thanks for teack=hing me that!

    Called Tattie Scones in Scotland, they’re made with just flour and mashed potato (no egg). Traditionally made immediately after the meal was eaten, while the leftover potatoes were still warm. Then flour is added until the mix becomes like a dough that can be rolled out. They were kept overnight in a cool place wrapped in a tea towel, and fried in butter for breakfast the next day

It was a great visit and we toured the castle. We live in a town called Mount Sterling. Our town was founded by a gentleman named Hugh Forbes, who came here from Scotland.     Love potato pancakes. I Always add onion to mine. Preferably green onions. Daddy always liked butter and syrup on his, I do too. As far as over cooking the proper amount of potatoes. General rule of thumb is 1 medium potato per person. Always add couple of extras for big eaters. This really works well with potato salad. Thanks for sharing your recipes and talents.

    We used a greater and grated the potatoes, and made potato pancakes that way!!! Which you reminded me of here!! I’m going to try and make some potato pancakes the way I was raised to do it with the greater!! I never make mashed potatoes!! But thank you very much… I watched your video to help prompt my brain on what to cook and how to cook again!! I’m 75 and will be turning 76 soon!!! And my “ tinker isn’t tunking” like it used to!!!     Fixed some in my air fryer with Christmas dinner leftovers. I add garlic and onion powders, an egg, flour, a little bit of sugar, some shredded cheese and some old Bay seasoning. I add minced onion to some for my husband. Frying them absorbs a lot of grease so I fixed them in the air fryer last time and added extra cheese to the top! They were delicious!

    My mother made the best potatoe cakes. My grandpa was born in 1885. My mother was born in 1929 and her mother would make these for her kids long before the Depression. They didn't waste. They simply made something out of nothing to make one more meal out of what they had left over.

    My grandmother used to make these when she had leftover mashed potatoes, and you mentioned boiled potatoes she used to make them and I never knew anyone that had them back then, I didn’t realize it was an old school thing

    I put chopped onions in mine and make them like you do. That chopped onion makes them delicious.

    I have always made my potato pancakes with mashed potatoes but I use Italian bread crumbs in lieu of flour. Yummy😊

    Don’t forget the Lowery seasoning salt that’s gonna give it a great flavor. I always get a little pinch of onion powder, little pinch of garlic powder and put some parsley flakes in there. My gosh is that ever good!

    I like to fry some bacon first. Then I crumble them into bacon bits. Then I add cheddar cheese and bacon to the potato mix. Then I fry the potato cakes in bacon grease and half a stick of real butter. I add vegetable oil as needed. It's best if the oil doesn't go beyond the halfway point of the pancakes. It can also pair well with come Jimmy Dean sausage patties on an English Muffin. SO DARN GOOD!!!
