Portobello Mushroom Caprese
This is a favorite in the kitchen. It's easy to make, aromatic, and surprisingly light. An ideal dish for vegetarians or when you're ready for a meat break.

Recipe below:
Preheat oven to 400°F.
1. In a saucepan combine 1/2 stick of butter, 3 minced garlic cloves, salt and pepper to taste (usually just a pinch). Using medium low heat, cook down the butter and garlic until fragrant, about 3-4 minutes.
2. Remove the stems from the mushrooms and brush each side with the garlic butter sauce.
3. Halve about 10-12 grape tomatoes, halve 8 oz of buffalo mozzarella and julienne about 10 basil leaves. Set aside a pinch or two of basil for garnish.
4. Divide the tomatoes, cheese, and basil equally between the mushrooms. Cook in oven for about 10-12 minutes or until tender.
5. Wipe down your saucepan, add 1/4 cup balsamic vinegar and 2 teaspoons of brown sugar on medium low heat. Let it reduce until it's a syrup consistency, about 4-5 minutes. Once reduced, remove from heat.
Remove mushrooms from oven and drizzle the balsamic over the top (add your extra basil atop for a garnish if you'd like). Serve immediately.

I made these and they were very good. Easy recipe, too. One thing I did notice was that there was a lot of liquid coming out of these as they cooked. Mine were floating in water by the end of 11 minutes. I think the next time I make these, I will put them on a grate and set that on the cookie sheet.

Just made this recipe. A delicious appetizer that cannot go wrong. Thanks for sharing! I've substituted the basil with a much less amount of finely chopped chive. Also, filled the tiny gaps with sprinkled finely diced little white mushroom pieces. Tip: This also works well with on a piece of toast if you got leftover ingredients or not enough portobello mushrooms.

Actually dairy is super acidic and is poison for the human body. It can create lots of problems especially in the digestive area. It inflames the pancreas like no tomorrow.

Julianne is for harder items, chiffonade is for leafy veg/herbs. But this recipe is delish!
One tip to prevent excessive moisture and unwanted burns, remove the seeds from the plum tomatoes before cooking !

It looked good until the vinegar drizzle. Vinegar is a migraine trigger. I might try this minus the drizzle.

You should not ever get your mushrooms wet they will start to rapidly degrade. Most people don't wash their mushrooms but for those that want to you would just use a small brush and basically dust it off

Cherry tomatoes are shaped like a cherry, grape tomatoes are more elongated

Mine watery too..pretty sure it was from tomatoes..my balsamic Vin sauce never worked..

I wondered about that, too. It seems there are differing opinions about removing the gills.
I remove the gills taste much better you don't know what got caught in them 🤢
Um, bake at??? Is the temperature a secret? Also, you didn't remove the ribs from the bottom of the mushrooms. Gross. Are you sure you're a cook?
