Today we are making a very healthy Chinese soup - Lian ou pai gu tang, which means lotus root and pork ribs soup. Cantonese cuisine contains lots of soup recipes. They all have the same idea - which is healthy. This recipe just one of them. In my family, we usually have a little soup before dinner to kind of get your stomach ready. And have some soup after you finished so everyone else knows that you are done. They won’t keep adding more food to your plate. To me, I think this is a smart way to eat dinner. You will never stuff your stomach 100 % full because part of it just the healthy soup.

INGREDIENTS
- 1 pound short pork ribs
- 2.5 tbsp of Chinese cooking wine [Amazon Link: geni.us/3hdHAM]
- 8 ounces of lotus root (sliced into thick pieces)
- 8 ounces of sweet corn (cut into short pieces)
- 6 red dates [Amazon Link: geni.us/AbwnnM]
- 1 tbsp of Gouji berry [Amazon Link: geni.us/3se8C]
- 1 tsp of salt
- 4 slice of ginger
- 1 piece of spring onion
- 1/2 tsp of white peppercorn [Amazon Link: geni.us/93Id0E]
- 6 cups of water

INSTRUCTION
- Cut the short ribs into individual pieces.
- Cut the golden sweet corn into 1.5 inches size.
- Discard the end of the lotus root. Peel the skin and cut it into 2/3 of an inch thick pieces.
- Blanch the ribs to remove the bloody crumbs: In a clean pot, add in the ribs, 2.5 tbsp of Chinese cooking wine, and 1.5 liters of water. Cover it. Bring this to a boil. Take out the ribs and discard the water.
- In another clean pot, add in the blanched ribs, the sweet corn, lotus root, 4 slices of ginger, 6 pieces of red date, 1 tbsp of goji berries, 1/2 tsp of white peppercorn, 1 piece of spring onion. 6 cups of water. The liquid should be enough to cover all the ingredients.
- Put on the lid. Bring this to a boil. Now you can add some salt. Mix it up and taste it to make sure it fits your taste. Turn the heat to low. Let this simmer for 1.5 hours and you are done.
- Before you serve, take out the ginger and the soggy spring onion.

    Fo sho. When Naruto first came out in the 2000's I similarly had a fascination with ramen (which wasn't the global phenomenon it is today lol) Anyway this soup is straight fire I can seen why WWX thinks it as his comfort food.

    love it, this kind of reminds me of my favorite soup my mom made. pork neck bones, dried bean curd? (foo jook? idk the romanization for canto sorry) and carrots. very simple. actually not that similar to this honestly. just Cantonese soup got me lol

    Great work. Very true about the soup rule at the end. Everyone orders all this food and then they dont eat it and make YOU feel like you are the one wasting it if you dont eat it all. Then you just push it on someone else. Even if they say no, just ignore them and fill their bowl. They will just start eating it 9.9 times out of 10.

    Hi there, Ive always loved the idea of light and clear soups especially those in chinese cuisine. However as part of my beliefs, I dont consume pork or alcohol, and as such I always find it hard to cook chinese dishes, though I love the ones I am able to eat :(. Can I substitute the pork in this with an alternative like beef/lamb/mutton ribs instead? will it alter the taste too much? Also, what is the closest substitute to chinese cooking wine without it being alcoholic in nature? Cheers :)

    I like this recipe. I work in the Chinese and Thai restaurant. Sometimes for lunch they make this soup. I've never seen it with lotus root and I love Lotus root. Thank you for this recipe I will be making this one also.

    You can use carrot, Chinese turnip radish, even potato will work just add it to the soup 30 minutes before turning off the heat.

    Just cooking this without the berries but with shitake mushrooms and half of a pork head (and some other pork cut) instead of the ribs. It's already smelling great. Edit: just thinking about adding some katsuobushi flakes and kombu since I also love Japanese food, especially ramen soup. Should I give it a try?

    I tried making this one time in the instant pot... but I cooked it too long. My brother slid the bone out of the rib, squeezed it into paste in his hand, and mixed it into the broth... 2 hours on high pressure is too long. 🥲
