Pork Ribs in Chile Verde (Costillas en Chile Verde)
PREP TIME: 30 minutes
COOK TIME: 2 hours 30 minutes
SERVES: 8
INGREDIENTS
2 bay leaves
1 teaspoon cumin seeds
1 teaspoon coriander seeds
1 teaspoon dried oregano, preferably Mexican
1 teaspoon black peppercorns
2 tablespoons rendered lard or extra-virgin olive oil
4 1/2 pounds (2kg) pork spareribs, baby back ribs, neck bones, or shoulder, cut into 2-inch pieces
1 large white onion, chopped
5 teaspoons (20g) Diamond Crystal or 1 tablespoon Morton kosher salt
6 chile poblanos, stemmed, seeded, and chopped
1 pound tomatillos, husked, rinsed, and quartered
4 large jalapeños, stemmed and seeded if desired
6 garlic cloves, chopped
6 scallions, root ends trimmed, thinly sliced
1/3 cup cilantro leaves and tender stems, roughly chopped

    I really appreciate how Rick is so cool and laid-back when a "mistake" is made like his apron, peppercorn, the spices and so on. Helps me to feel so much more relaxed about cooking.

    I made this today and served it with grits, kind of a south-of-the-border meets the South kind of situation and it was so fracking good my roommate sat there eating it in silence...it was that good. It's literally comfort in a bowl.

    Thank you for not having your apron on initially and adding the seasonings a bit later. I'm forever having to wash my hands, clean a spot on my shirt, and then put on my apron. I can't wait to talk to the butcher & expose more bone for flavor. Great video! 👍

    the beginning of this video is the sweetest thing ever! I already love Rick for his food & his personality, but watching him lavish his sweet dog with love has totally melted made my heart!     We made this dish, and it was AMAZING! We made it with Rick's Frijoles de la Olla recipe (also incredible, never soaking beans again), and it was the best meal we had made in months. The meat fell off the bones, the beans were tender and creamy, and the chili verde sauce was so good, we made tortas with the leftovers and dipped them in the sauce the next day. Thank you, thank you for these recipes! We can't wait to make them again!

    I love the way Rick cooks. So much flavor, so much passion for the food he makes. Would Rick ever be curious to make Filipino/fusion dishes? Especially being another Spanish colonized country, and having plenty of savory sweet dishes, I’d love to see how he approaches them!

I did watch like the first month of BA, but it felt so forced, there was no heart in there for me, I really tried to open myself to this new path but I couldn't, so chose to find some other pure creators from all kinds of backgrounds, and always loved rick for his expression, bright colours and mexican food, I gotta try every single sweet heat recipe some day :D

    All the veg on the sheet tray is exactly how I make my roasted salsa verde. Just add salt and pepper, and whiz the whole thing in the blender after roasting. And I have used it as a base for pork chili verde, but I'm going to try this with the ribs, all in the stew pot. Sounds delicious.

    I made this, and it was GLORIOUS! I cheated and used a jarred salsa verde, but the addition of fresh cilantro at the end made it taste fresh. I found the cut ribs at my local international market, and I can attest that the bones make a big difference in the final dish. Thank you, Rick!

    Thanks - Great recipe! Two small options for you. Use Mexican beer instead of or along w/ water. Also - if you have a smoker, smoke pork ahead of time until meat is about 2/3 cooked then add to veg about an hour into the simmer cycle.

    I made this using pork shoulder. My only deviation was I put the dutch oven in the oven on low for three hours. It turned out fantastic. Will definitely use this recipe again with other meats. Thank you

    Tomatillos and tomatoes are related in that they both belong to the nightshades (as do peppers and eggplant). different species though :)

    I once worked as a cook for a wealthy bed-ridden man. All he did was shop online. He ordered a 5-lb bag of whole cumin seeds... He's been dead three years. I STILL have half of the seeds in my freezer...
