Pong Pong Prawn 篷篷虾 | 金黄酥脆 | Mr. Hong Kitchen
大家好 这道菜是网友粉丝之前要求我做的 这一期视频就展示我自己的一套做法 ,注意细节 花点心思 一定能完成这道菜,炸过这道菜的油不怕浪费 可以再使用 炸鸡 炸鱼 或炒菜都没问题 喜欢看我烹饪视频的朋友 欢迎订阅 打开铃铛 阿鸿陆续出好菜 带您爱上烹饪 感谢大家的支持
Ingredients (Diana Aw)
1. Prawn x6 devein (marinate with little salt and pepper)
2. Curry leave x1 stalk (optional)
Batter (mix together)
1. Egg white x1
2. Corn flour 4tsp
3. Plain flour 1tsp
4. Tapioca flour 5tsp
5. Baking soda 1/4tsp
6. Water 1-2tsp
7. Oil 30g
Method
1. Heat wok with more oil to 140deg
2. Turn to medium low heat and coat the prawn with the batter. Dip into the oil and fry till golden brown
3. Add curry leaves just before prawn is ready
4. Place the prawn on the plate and sprinkle little salt and pepper
5. Serve and enjoy!

虾仁 6只 (去壳,保留虾尾,挑出肠线)
咖喱叶 1支 (可不放)
调味: 盐和胡椒粉 各适量
炸粉浆: 混合均匀
蛋清 1粒
玉米粉 4 茶匙
面粉 1茶匙
木薯粉 5茶匙
苏打粉 1/4 茶匙
清水 1-2茶匙
油 30g

可以试一下把虾头和虾壳熬出虾油代替面糊的食用油,可能会更香,或用虾头和虾壳煮成酱汁点蓬蓬虾吃,虾头和虾壳就不会浪费了,纯粹个人说法,没别的意思。😊😊👍🏻👍🏻

I tried this for lunch few hours ago. There was just too much oil and the batter refused to stick to the prawns. I tried to drain off most of the oil, but it was still too slippery to stay on. The remaining batter I just fried spoonfuls were crispy though.

Hi Mun Yee, I have tried this dish before. Few suggestions: 1. Remember to pat dry the prawn before coating 2. Thoroughly mix the oil with flour before coating the prawn. 3. Try holding the prawn tail and then coat it in left and right motion like what Mr Hong is doing. This way the batter will have no problem to stay on the prawn. 😊
