Pollo al Ajillo | Garlic Chicken

As you probably know by now, in Spain we love our garlic. We love a good chicken too - perhaps this is why this is one of the most popular dishes on any tapas bar menu. It’s also very popular done with rabbit - if rabbit is available, I recommend you give it a try.
If you like a bit more sauce, add a chopped onion along with the garlic and don’t let the sherry reduce as much - perfect for dipping fresh bread into!

@@thespanishchef Please Keep the Videos coming Omar, we are really enjoying them and they certainly are useful. I made the Pollo al Ajillo last night and the whole family really enjoyed it. The best thing is the simplicity of it, I will do this on a weeknight too. My wife is gonna buy me your book 👍👍

You should! The beauty of this recipe is that it is so simple and we all like a good frango!
I love this dish. Very simple but very delicious. I eat this with cheese triangles to make it creamy in the mouthfeel while eating.

Hello Chef! Just a quick question, which version of the Pollo Al Ajillo recipe do you prefer? The one in your book Tapas Revolution which uses Manzanilla Sherry instead of White Wine etc. Or the one you have presented in this video? Thank you Chef!
I agree, great and at the same time simple recipe. The only thing is that I am going to boil potatoes for 20-25 minutes instead of 15 next time.

Yes, its a clay pot. sometimes refered to as terracota clay pot because of the type of clay we have in Spain
