I'm doing experiments! You would have your best luck with coconut kefir made from caned coconut milk. Other store bought nut milks are so thin and mostly water, so they wouldn't create a "cheese" very well.

Lol you vegans. In other words can I make kefir cheese with no ingredients actually in the recipe? Her answer was a good one, but it's just funny. I look for vegan recipes that highlight the natural flavors and benefits of what vegan foods offer. You will find if you try to do this instead of replace this or that, the recipes and taste AND benefits are awesome!!!! Like morrocan vegetable ragu, or different types off hummus, salad dressings, doughs, lactofermenting, sauces, etc. Also, if you insist on staying vegan, look into recipes that are international because many other countries have a diet more limited in meat and animal products with BOLD and AMAZING flavors!

Can I make kefir cheese with my kefir when it has already separated? Or, will that maybe effect the flavor?

It depends on the individual. Some need to heal their gut first before adding dairy into their diet. Depends on how sensitive you are and what you need to heal from.

Does the kampucha contain alcohol or not and can I use the mother of apple cider vinegar instead of scooby? and after doing the kombucha, we put the Scooby in the refrigerator or not

Hi Noura, You must use a kombucha starter and scoby to make true kombucha. Using apple cider vinegar will not make kombucha the same way. All cultured foods have small traces of alcohol (as does orange juice and soda) But they are very very minimal. I talk about that in my kombucha article here: www.culturedfoodlife.com/is-kombucha-good-for-you/
