Plant Food Toxins in an Evolutionary Context - George Diggs, Ph.D. (AHS14)

Over the past several decades, tremendous strides have been made in the study of plant chemical defenses. These defenses include digestibility reducers, semiochemicals, hormone mimics, photosensitizers, cyanogenic compounds, and a variety of other toxins that interfere with herbivore structure or metabolism. A great deal is now known about their effects in a wide variety of animals ranging from insects to mammals. The toxic or otherwise damaging compounds in plants eaten by humans (e.g., gluten, hormone mimics, some lectins, photosensitizers, saponins, etc.) will be examined in the broader context of a widespread and evolutionarily old arms race between plants and animals.

    I absolutely love a presenter who can clearly state that they don’t know an answer or have not researched enough on that topic to provide a clear enough answer. Rather than trying to come up with some crap answer, this guy admitted when he didn’t know. Thank you for being a very normal standard that all scientists should be.

    @@hgc1581 What? WHPB diet includes essential fatty acids. I also take omega 3 supliments from algae (250mg DHA, 120mg EPA), other fats I get from flaxseeds and sunflower seeds.

    I went carnivore this year, at age 64, after decades of being vegetarian or vegan. I feel fantastic and only regret not doing it sooner. Adult-onset eczema was the catalyst. It's completely gone now, despite the dermatologist's proclamation that eczema can't be cured, only "managed." Sure, more money that way.

    I’m very curious about going carnivore, reading many of the comments… do you make sure your meat intake is organic, though? I wouldn’t be able to buy organic meat (price/availability).

    I wish he would've talked about other plant toxins sensitivity to which is more widespread among people. They include: oxalates, salicylates, phenols, nighshade alkaloids etc..

    Since plants and herbivores co-evolved, many plants benefit from the pruning, soil stimulation, urine, manure - even the saliva of herbivores feeding on them. The acacia example, for instance: when giraffes were fenced out of certain areas where acacia grew, the acacia did not thrive and grow even better, as expected. Instead, those acacia trees declined! The soil life, the plants, the insects, herbivores, predators... they are all parts of one system.

    Good points. Regardless though, walk out in the woods. You're not going to see a vegetable or fruit farm. You will see animals. Our ancestors main diet was animal based with brief intake periods of plants when necessary. And it was seasonal. It wasn't plant based with minimal animals. No other animal manufactures their own food like humans do. We've moved away from our ancestral diet and we're paying for it. The carnivore diet has been life changing for me

    this is exactly why I had to go carnivore. My body went crazy and I ended up with an insane list of diagnoses for autoimmunities. I react to everything that is not meat, even dairy. But so far, so good! This is a great lecture! Thank you very much!

    Round Up also changes dna when applied to wheat so you're not just dealing with gluten and lectins in wheat, but also the farming practice of using Round Up for a quick harvest.

    @@RealAudi0 True I understand that but I'm in chronic pain (from years of a certain emotional stress) so I have physical stress all the time so I cant take stress from plant toxins at all. I'm now managing my emotional stress with different modalities like ReFlexorcise, Tapping etc. You'll see when you get older.

    @@MsAnchovey Your level of awareness is your friend - not many people could accurately describe their condition the way you have. Are you making sure you are getting adequate magnesium? Magnesium is the the conductor of the cellular orchestra, and it gets booted from the cell under acute stress. Calcium then tends to take over, and this, coupled with some other effects, tend to turbocharge the sympathetic (fight or flight) nervous system. Over time, that can run down (burnout). Anyway, your red blood cell magnesium level (would ideally be above 6.5 mg/dL, many around 5.0 or less). Microscopic rusty iron filings added to the food supply beginning in the 1940's, and accumulating ever since, add even more Mg depleting stress. The body's master anti-oxidant enzyme, activated ceruloplasmin, becomes depleted (often less than half what it used to be in the 1940's) and the body comes under even more oxidative stress. I believe Morley Robbins has found the key levers of this process - search his name and listen to as many of his interviews as possible, starting with his more recent and going backwards. He developed a blood test, The Fully Monty A&D blood test, that reveals much about one's true iron, copper, ceruloplasmin, retinol, hormone D, zinc, calcium, and magnesium status.

    One answer to question at 43m30s : Some cultures that eat certain beans with highly toxic lectin levels, cook the beans in milk. This de-toxifies the lectins by binding them to a component of the milk. This effectively de-activates the lectin.

    Throughout Europe, grains were soaked overnight, and for as long as several days, in water or soured milk before they were cooked and served as porridge or gruel. Many of our senior citizens may remember that, in earlier times, the instructions on the oatmeal box called for an overnight soaking. This is nearly lost knowledge as the general population is concerned, one of the reasons people are having digestive problems, they're not soaking their grains, beans, seeds, nuts, legumes, etc.

    Most of the time, to be fair, I don't think doctors realize this. They're just doing their daily rounds, surviving on minimal sleep, prescribing a quick fix, depositing their paycheck, and going home just to start again tomorrow. It's easy to get complacent in an industry. Big pharma and medical administrators on the other hand should know better. They all need to step back and look at the big picture

    anticuchodechina Drink water. Don't eat plants or herbs or spices with your meat. Don't eat junk food. Just eat pure animal food with butter or sea salt or eggs. Raw milk. Think simple.The constipation is caused by eating cooked food with a lack of water and if u have even 1 chocolate bar etc within same time its gonna alter your digestion right. The days i eat clean the poop comes out perfect no wiping! The days I neglect water, drink coffee or eat choc a lot.. Get constipated. It usually goes away if you eat clean and simple.

    anticuchodechina, I have pretty much the same experience as Mr. Carnivoire; zero constipation on pure carnivore, perfect digestion. Any fiber (veg, nuts, etc.) cause digestion issues. I’m a bit perplexed by the reports of constipation, but even those seem not to last long. My digestion improved immediately. I am wondering if this may be the difference of going from Keto to carnivore, where you have already removed many of the fiber and issue foods and been eating pretty clean (assuming the person was not doing “product” keto), versus straight from whatever other diet, where perhaps a change in micribiome must take place (much like going from sugar-burning to fat-burning requires a transition).

He is giving you proof...look at the latest info from non vegan scientists , biologists , etc. They are people who are trying to heal from their own health problems...heck I tried vegan too but it wasnt the answer. Low carb eliminated all my misery. That's my own personal proof !! I'm happy are you ??? Finally finding the answer has given me a calmness about my health and future. I feel a teenager again and I'm 60 yrs old. Nobody is gonna change my mind. It's my god given body and you vegans know deep down your diet is wrong that's why you all are so dang freakin angry !!

    @Viero my veins are better now. Blood pressure is low 110/78. No pain. Mentally clear. Low carb doesn't mean no veggies. It's only been 3 weeks and lost 8 lbs without any strenous exercising. Do you know why they advice vegans to eliminate fats ? Do you ! It's not what you think.

    @Viero hey idk about anything diet or shit but i can tell you first hand. I was eating "healthy" carbs" fruits and veggies, and my intestinal health went to shit. I was b12 deficient (only naturally obtained from MEAT) and got IBD full intestinal inflammation ulcer colitis. When i started intermediate fasting and cutting out sugar, caffeine, and eating alot more meat then veggies. I was able to reverse inflammation in less then a year. The doctor almost shit himself from disbelief. So basically Veggies and grains are ur enemies, consume more meat.

    The worst health condition in my life was the year I sticked to a so called whole food plant based diet. What a mess. Fact is whole plants are more problematic than refined carbs. The last have no nutrition, sugar apart, but much better a cup of white rice or at most some boiled veggies, for taste, in a meat centered nutrition, than that crazy amount of beans I had to eat to sustain the sport activities (and losing strength and muscles nevertheless).

    When I eat meat only, I have zero digestive issues. When I eat plants, I always have one or more of bloating, cramping, reflux, gas, constipation or diarrhea.

    @BenBenson That is not correct. Only the parts of the soy that can't be processed into human food or are too damaged to be sold are given to cows. Which is most of the plant, yes, but the crops are not grown FOR the cows. This is just another way to profit off the same crop. This goes for wheath, corn and other cattle food as well. It is the stems, husks, damaged seeds, underdeveloped seeds, etc, that are selected for cattle. The rest goes to the grocery stores and factories to make food for us. Crops are not specifically grown for cattle. Some statistics make it seem like the majority of the crops are grown FOR cattle when they talk about how much soy / corn / etc goes to cattle. But what they fail to disclose at least in parts of the study that regular people read (aka the summary) is what when they say "cows get corn", they don't mean the corn that is grown for humans, but the byproducts that are not even human-appropriate food. Cows just eat the parts humans can't. The whole crop is not grown for the sake of the cow tough.

    If I go down to any common store and look at shelf stable foods I will find 9 times out of 10 that it contains Soy Lectithin emulsifier. Sometimes it will be sunflower lecithin. 'Everything' is hyperbolic, but its definitely in most processed foods.

    Evolution doesn't just occur in plants. Animals have evolved countermeasures for most of these plant poisons. Some, like the monarch butterfly and poison frogs, actually concentrate plant poisons from their diet for their own defense. Mammals arrived on Earth after insects and amphibians, but we have had millions on years to evolve countermeasures against plant toxins. And it's beginning to look like our bodies may actually make use of some of these anti-nutrients. E.g. some lectins prevent cancer cells from becoming becoming malignant, at least in animal studies. So, while our ancestors eating lectin containing plants might still have gotten a tumor, but the lectins would cause it to grow slowly enough that they would die of something else.

    @@broddr Plants and their predators (mostly insects) coevolve for sure. If an herbivore can "crack the code" for a plant toxin, it might get exclusive access to that food source (koalas and eucalyptus comes to mind, even cows with their ruminant gut have access to grasses which deer can't handle). In our case, our ancestors were focused on non-toxic animal sources of food, so we have few coevolved strategies or biochemistry to deal with plants, starting from our inability to process cellulose. So for us, eating plants and their products is a real crap shoot as to what may cause issues, and this goes right down to the individual level of which individuals can handle which plants, and depending on preparation, etc..Meanwhile, virtually every animal, certainly mammals, birds and most fish, are fully edible and bioavailable for the gamut of nutrients. This is our legacy as facultative carnivores.

    Observing chimpanzees, our closest relative species, should clue you in. Contrary to popular belief these days, hunting is an extremely minor part of chimpanzee life, and they only do so when other foods are already abundant, most likely primarily for social reasons rather than for nutrition. Many chimpanzees go their entire lives without ever hunting. What chimpanzees do is use their instincts to find out what is good food for them, and what they find is quite universal: fresh and ripe fruits (which contain zero antinutrients) and young tender leaves (which contain few antinutrients while still young); these constitute the vast majority of the chimpanzee diet. As a human, these are also what you'd instinctually be eating, no PhD or inter-generational wealth of knowledge necessary at all, other than the tens of millions of years of genetic code making you instinctually understand that these are natural human foods. Human toddlers and infants also instinctually know this, and will pick fresh and ripe fruit over any other food.

    chiledoug kizerian Have you tried one of the 'ancient flours'? Einkorn, Spelt, Rye, Kamut, for example? I don't know what a chromosome is, but my research some time ago revealed: 'KAMUT khorasan, along with emmer, another ancient grain, has 28 chromosomes, while spelt and modern wheat has 42.' Einkorn has only 14. I wonder if it is the chromosomes that give us the problems.

    I’m a 58 year old male having had five concussions. I enjoy your channel and myself, have a baby degree in Food Science and Human Nutrition. You are part of my continuing education and I thank you for your great work. I’m very athletic and lift weights regularly. Having said this my blood work came back with an ALT of 57, an AST of 40 and an eGFR of 57. My question is my ALT, being a marker of bad metabolic health. I was supplementing 20 grams of creatine per day, hoping to lessen the effects of the head injuries I had sustained. My MRI shows “multiple cortical defects” in both frontal lobes. Would these numbers worry you? Thanks for your input.

    In herbal teas? No. Why would herbal teas have lots of tannins in them? That makes no sense. Coffee and regular tea has a lot of tannins, herbal teas are very low in tannins. Chocolate, for example, is very high. How did you damage yourself with lots of raw fruits and veggies? That also makes no sense.

    Absolutely. Organic only means they don't use certain products on their crops. But is is still the exact same seed you are eating. Just with different things sprayed onto it. What they spray on it will not have an effect on the antinutrients and plant toxins.

    @@kyleblackmore8243 - Ah, but you are forgetting, or were never aware, that the digestive tracts of the lambs is designed to eat these things. There is no 'poison' from these plants that accumulates in the sheep. Virtually everything on Earth lives by eating something that is alive (parasites) or that was alive, or on the remains of things that were alive. The bacteria that live on the chemical and heat energy of deep sea vents are notable exceptions, and they form the basis of a food chain around those vents. The lambs eat the plants, and also prune and fertilize them, and the soil Food Web. Carnivores eat the plant-eaters, and omnivores eat both. It's called an ecosystem. This is what keeps life on Earth going. By the way, by the time lamb is harvested for human food, it is not a 'baby'; they are typically breeding age, though many are males surplus to needs for breeding. Before humans, other carnivores ate them, and whatever other sheep they could catch. Remember - humans are animal, too! :-)

Humans have used herds of sheep and goats to control these plants and other weeds and brush for almost as long as humans and these herbivores first formed their symbiotic relationship more than 12,000 years ago. Now universities, government agencies, and landowners are rediscovering how effective these animals can be at controlling weeds- including those that are resistant to toxic chemical herbicides- which DO NOT break down to harmless compounds in the environment, and DO bioaccumulate in animal and human tissues - including glyphosate, which has been found in the cordblood of newborn babies (the young of humans) and human milk. Spotted knapweed in the West and kudzu in the South are just two examples. When we work with the ecosystems of the planet, instead of trying to industrialize and 'conquer' the earth, biodiversity increases, water cycles are restored, erosion is halted... and productivity is increased, while soil carbon sequestration increases, along with soil fertility.     Levels of plant toxicity (as far as I am currently aware): Most are perfectly edible daily: Botanical fruits. Exceptions: kiwi, grapefruit, tomato (with skin and seeds on). Fruits are better without the skin as the skins are rich in antinutrients and plant toxins, but the flesh itself is almost always free or very low in them. They hydrate and are a source of minerals. They are also easily digestable and tasty as the plant wants you to eat it. Many are fine in moderation: Berries. Berries are fine, but they contain antinutrients and plant toxins that can for instance stop the absorption of iron entirely when berries are eaten with a meal containing iron. Same goes for zinc. THey can also cause issues for those with histamine intolerance. They are less easily digestable than fruits, but they are still a thing the plant wants you to eat, so it won't hurt unless you eat them too frequently. Only as small side dishes and only when really desided: Tubers. The plant does not want anyone to eat their underground stores of nutrients and roots. Tubers are hard to digest and minimal, often negligable amounts of nutrients are absorbed from them. Really, their nutrient profile is laughably low when we compare what is on paper vs what gets absorbed. Also they are high in antinutrients and plant toxins. If you eat them, peel them! Just don't eat it at all if you know what's best for you: Seeds, stems, leaves. These parts are just straight up not for human (and most animal) consumption. They are plant toxin bombs. You won't absorb any nutrition or if you do it is so small it does not even matter. For instance, when oysters were eaten with a side of corn, people literally absorbed NO zinc form the oysters at all. They are also basically indigestable. Examples any nut, any seed, any legume, any bean, any grain, onion, garlic, spinach, kale (extremely toxic) and other leafy greens. There are 2 exceptions that I know of right now: coconut and chestnuts (they are unadultered and wild) seem to cause less gastric distress and are also very low in toxins and antinutrients compared to other seeds. Animal products: Meat is not toxic when from healthy animals and this also applies to organ meats (even liver). Shellfish and fish can be high in heavy metals, however there is evidence that when consumed raw these do not accumulate at all (for instance as sushi or sashimi). Raw egg whites have antinutients that bind to B1, but when cooked these are completely destroyed. Egg yolks should be fine. Dairy contains lectins, however the type of lectin it contains is extremely weak compared to plant lectins and does not damage the gut when eaten raw (actually raw dairy has a gut protective and gut repairative effect).

    Sally Fallon's Nourushing Tradions shows how grains are soaked and sprouted before cooking. This removes a good portion of phytic acid. Ruminants have the 4 chambered stomach and utilize the microbes to help break things down. Humans can try to mimic these tools with soaking , sprouting and cooking.

    You know that (excess) iron is associated with increased risk of colon cancer. Whole-grain foods such as oats may protect against colorectal cancer because they contain "anti-nutrients" like phytic acid that may help to get rid of excess iron.

    Or the wasp has learned over thousands of years to detect when a plant is being eaten and the caterpillars droppings or other signalling attracts the wasp. Learned. Not necessarily a plant learning to attract a wasp.

    So that ungulates and ruminants would eat them so we could eat those that eat the plants. They can extract nutrition from them. We have a limited ability.

    The theory of evolution, for any who choose to believe in it, states that evolution is a purely mechanistic process in which those with some mutation that allows them to reproduce more offspring will naturally become more populous than those without that mutation. A mutation would be some spontaneous change to one gene, let's say. So the mutation's phenotype expression (the real world result) would be something very minor, in general. So far, they've never demonstrated any new species coming from an old different species, so the whole theory is dubious at best.

    That's just it, the cause and effect isn't close enough together in time. The plants who had those poisons wouldn't reproduce any better than those without since their attackers survive to keep eating them for a long long time.

    Whilst there is good information here, he underplays the fact that wild plants have been bred to be more edible and eatable, plus the fact that most food traditions use extensive fermentation, culturing, preparing and other processing to make fruits and vegetables more nutritious and much less toxic. However the raw vegan diet seems much more likely to cause long term issues.

    He does touch on how traditional peoples processed foods to make them edible, even in our society greens and other vegetables were cooked thoroughly which can attenuate potential toxins. Only recently was it deemed appropriate to barely cook broccoli, for example.
