Pirate Peach Tassies
Christmas baking season is here! This recipe combines a tender, flaky cream cheese tart shell with a peach filling - but I am giving it a twist with my Pirate Peach preserves.
I am including the Peach filling recipe below, but don’t be afraid of trying homemade or bought preserves!
Ingredients:
3 oz cream cheese softened
1/2 cup butter softened
3 Tbsp sugar
1 tsp lemon juice
1 1/2 cups All Purpose Flour
Peach filling:
4 Tbsp cornstarch
4 Tbsp sugar
Pinch of salt
2 cups fresh peach purée
2-4 Tbsp sugar
1 Tbsp butter
In a medium saucepan, combine cornstarch, 4 Tbsp sugar, and salt. Sweeten peach purée with 2 - 4 Tbsp sugar and gradually add to cornstarch mixture, blending until smooth.
Bring to a boil over medium heat, stirring constantly, and cook about 5 minutes until mixture is thickened. Remove from heat and stir in butter. Cool slightly and spoon into tastier shells.

This would be great for a jam I made that cooked way too long (first time using my canner) and the jam is thick and delicious BUT when I try to make a pie, cooking it makes it hard. This is the perfect answer to using it.
I made the shells and filled them with caramel apple pie filling and topped with whipped cream. It was a huge hit. BUT just had to let you know they were so VERY EASY and quick and tasty. Next time I will try chocolate pudding with whipped cream, blueberry jam with a bit of cream cheese filling, candied pecans under coffee ice cream. I also want to try a pie sized shell with my french, apple cream pie. These were really good and not one left when I made it for my family.
