I used to like gugas channel and was a subscriber before he even hit a million however all he does now is steak and nothing else . And it’s the same steak every time! steak salt pepper and garlic powder . It got old after a while and I unsubscribed because I was tired of seeing nothing but steak videos over and over again.

Technically he said the king of specifically Brazilian steaks not all steaks. If all steaks are taken into account the king is A5 Wagyu with the queen being Picanha

As a brazilian, i feel honored by having Sam trying our picanha. Thx and I hope you try more Brazilian cuts in the future (PS there will be salty brazilians complaining about you cutting out the fat, just ignore them. You did it in your way and that looks fantastic, just as aways)

@@mannywilde gauchos in general make a vey good barbecue. And by gauchos i mean argentinians, uruguayans and people from rio grande do sul. Apart from that, im not sure if i do agree that brazilians make "the best" barbecue. People are very poor in our country and its not everybody that has access to high quality meat...

@@jgerdinggmail He does cook with Max (and his other 2 kids) once - on an old cooking show back when he was on TV in San Diego and long before he took over as the home done cooking show. But he hasn't been on since that one time.
Love the content as always. A detail: as far as picanha goes, yes it’s the “famous”, more expensive and highly promoted cut in Brazilian bbq, but chimichurri is actually from Argentina and Uruguay, where they bbq in parilla style and also never season the meat prior to grilling it. And there the picanha is rarely a part of the show. Those two countries share the “gaúcho” culture with the southernmost state of Brazil, Rio Grande do Sul.

Not its not the most expensive. Filet mignon (tenderloin) or Lombo as they say is way more expensive, just like in any part of the world - since its so little

Laurence Sabel it’s just a different result. Some cuts are way better when seasoned before, but if you watch a parrilla being made, it’s about thinner cuts, rarely are they not with the fiber already cut/exposed. In those situations not seasoning before might preserve internal moisture/tenderness. I personally prefer other style and don’t understand the Argentine style that extensively to feel like I could fully respond your question.

Salvador Nobre Veiga yep certainly those cuts are usually more expensive (sometimes not here in Rio Grande do Sul, but won’t argue about everywhere else in the world). Filet mignon is just kind of “flavorless” by itself and not the greatest for “barbecueing” so it’s really a rare sight both in Brazilian or Uruguay/Argentina bbqs.

Hey Sam, just wanted to correct you on something you said, in Brasil we don't eat chimichurri unless you're going to a Argentinian stake house, we eat it with vinagrete, as far as I know chimichurri is only eaten in Argentina, Chile and Uruguay. Don't really know about the rest of Latin America but I'm 100% sure on the rest as I'm part Brazilian part Argentinian and have family in Uruguay and knew some Chilean people. Great video btw, love to see our culture in videos like yours

Brazilians, Uruguayans and Argentinians all say they invented dulce de leche, both chileans and Argentinians claim empanadas are theirs, Peruvian ceviche Is big in Brazil, we could go on with this all day 😂😂

Dude, I just discovered your channel recently and have been watching old vids of yours. They’re infinitesimally better now than they’ve ever been. Your channel is the shit. I love it and the people I use your magic on, love you through me for it. You’re doing the lords work Max. Your dads pretty cool too as far as dads go, but it’s pretty obvious he’d be working at a shitty diner if he didn’t have you to make him look amazing, which he is. He’s amazing but nobody would know how amazing he is if you weren’t as amazing as you are and let’s be real.....we’ve gotten to a stage in tech advancement where nothing old people can do can be valuable with out young people making them relevant. Hey Sam. Just a small fix. I'm Brazilian, have a degree in gastronomy...I can say that here we eat picanha with Vinagrete and Farofa, not with chimichurri. What you done there actually looks like a local Vinagrete (Just missing tomatoes). Chimichurri is from Argentina, where they might no be eating picanha, but "Assado de Tira". Be aware that mistaken Brazil and Argentina can get you in trouble arround. Ahdushs Nice video, man.

I tried Picanah for the first time about a month ago while visiting friends in KC. It was life changing. Now my wife and I are moving to KC and i already know a butcher to get it from.... So excited!

You can use Culantro. Same (but more intense) taste, but doesn't bother those with genetic issues. Different family.

Wow... its very different from the Picanha we have in Brazil. The "traditional" picanha is almost a triangle form, with way less fat. And yes, it is not the King, but the QUEEN of all Brazilian bbq! I think it'd go great, cut down a little bit of the richness of the Picanha. It might be too much with the chimichurri though.

I am brazilian and watch all yours videos, tbh we don't eat picanha with chimichurri, argentinians do, but it looks awesome and probably tastes delicious, well done, I will certainly make that sandwich someday
so delicious. Will definitely make, but meanwhile watching you make this Sam I had some leftover bbq rib steak to which I sliced up thin, grabbed a couple sourdough ends & grilled them with olive oil, spread both ends with a mayo & dijon mixture, piled on the juicy medium rare bbq ribeye then topped it off with my homemade coleslaw mix of different cabbage, carrot, dried cranberries, vinegar, olive oil, sugar, salt & pepper which complimented the mayo and dijon sauce in ways I never expected it was delicious & fun to cook my dish while watching you cook yours. My sunday morning ritual tbh.

I'm a Brazilian and I can say. You seasoned the picanha perfectly. Most of the non Brazilian who tries to cook it, put a lot of different seasonings on it.
I had to pause less than 24 sec into video.. I confessed to my fourth boy now 15 to thank this Channel.. i made the bacon ranch crunchwrap... or I combined with what I had. THE DILL RANCH . After eating Sam's recipes I have the "Best" bowel movements I've ever had.
loved it and I can’t wait to try it myself. as a brazilian and son of a butcher I liked that sam used just salt to season the picanha. we use to say that good meat only requires salt, however picanha can be prepared in a lot of ways. one of most famous fastfood joints in my town serves a “cheese picanha” burger, which takes provolone and is amazing. I would not remove the fat before cooking it, tought. you missed a lot of flavour and could just had it removed before assembling the sandwich... anyway, picanha is number one meat in south brazil, ir is my favorite and I am happy you like it.
