I think the noodles got soft because of the interesting way they packaged it. Those noodles were sitting over that hot broth and just kept cooking. Maybe they got overcooked because it took to long between the time you got your food and the time you ate it? Thats why I think at my local pho place they package the noodles away from the broth because they would be overcooked by the time i got home if it was on top of the broth or floating in the broth.

I think you should order this and eat it at the restaurant to see if the noodles are still mushy. I think the way it was packaged, the heat from the soup continued to cook the noodles. If you try it there and they aren't overcooked or mushy, maybe you can request them to package the noodles separately next time.

I think the way they packaged it caused the noodles to overcook. That’s why I think most Vietnamese places keep them separate. Even not in broth the steam alone spill overcook them. The noodles used are very delicate but will have a good bite if prepared and packed correctly. It’s sad because it’s an easy fix.

You can definitely switch things up for your Banh Mi! Don’t give up on it. Proteins can be switched out! Try adding sriracha or chili oil, lime juice, and hoisin to your pho!

Nothing better than a good bowl of pho. The problem with rice noodles is that they go south so quickly. Even the next day they lose their integrity, whereas egg noodles, wheat noodles are still ok heated up later. (ie lo mein)

Ash- I want you to try another banh mi - you don't have to get a "combo" one that has pate! They have chicken,pork meatballs. BQ pork ones and stuff that you can try that doesn't have Vietnamese ham and stuff. Also they shouldn't have a strong pork flavor! If you ever come to houston please let us know :) there are SO MANY AMAZING VIET PLACES HERE!!! Also- I think you would love it personally, it's so fresh with the pickled veggies and stuff. The pate is what she doesn't like. It's made with organ meats, and that flavor is too strong for her. She did another review recently, where she had the same issue. It was so porky flavored, that it tasted gamey to her.

The noodles are not suppose to be soft/mushy. Generally a good place will pack everything separately and then you add everything in that is to preserve the meat from overcooking as well as the noodles. I break up the bag of toppings basil, mint, cilantro, jalapeños, then add the Asian sprouts and squeeze the lime in my Bun Bo Way or Pho. If done properly both are excellent dishes. I prefer spicy so I go for the Bun Bo Way. Then I top it off with/some chili oil paste...yum!

the reason why the noodles were soggy/mushy could possibly be because they were overcooked to begin with. the type of noodle that were in both dishes differ from your typical pho noodles. they noodles used in both dishes tend to soak up moisture/juice more quickly & easily than pho noodles.

Banh mi can be very customizable, you can add butter instead, many different meats, and any veggies you want mostly cucumbers, cilantro, and shedded carrots and dikons

I love 💕 pho if it’s done correctly and star anise taste smells like licorice but delicious with pho… the meat I don’t think it’s supposed to be that chewy…. If you enjoy the flavor of the bun Bo hue you can still enjoy it with different noodles. Just ask to substitute with pho noodles :) a lot of my texture sensitive friends do this

It must have been too long a drive. The broth should be steaming and the noodles should be al dente. Plus pho needs the veggies, some lime, fresh basil, and some spiced oil for flavor.

I feel like even tho technically the noodles were separate from the broth because the broth was hot it cooked the noodles more... Which is why its better to fully separate them..
Oooooh noooo the noodles should have substance to them not soggy! Place I go to always makes the noodles for transport a lil undercooked so when I add them to the broth they finish cooking

Squeeze the limes, not dump into the soup.. The noodles are not supposed to be mushy.
You could tell before you even said anything about the noodles, that they were soggy.

If you had it at the restaurant probably the noodles would not be over cooked. The steam in the containers probably made then overdone.

That was my 1st thought when you were unpacking it, they gonna be mush and then you confirmed it😢nothin worse, but an easy fix...keep the noodles from atop the hot broth cuz they keep ooóñnn cookin.

I've never had a pho with chewy meat. That would be so hard to eat! Juggling the meat, the noodles, and the broth, while chew chew chewing the beef 😂 I love Vietnamese food! ♡

That's what I came to say.
If you enjoy the flavor of the bun Bo hue you can still enjoy it with different noodles. Just ask to substitute with pho noodles :) a lot of my texture sensitive friends do this
It must have been too long a drive. The broth should be steaming and the noodles should be al dente. Plus pho needs the veggies, some lime, fresh basil, and some spiced oil for flavor.

I've tried vietnamese coffee before it is very good
