PHILIPPINES RARE RIVER FISH - Province Beach Home Cooking (Davao, Mindanao)

THESE RARE RIVER FISH ONLY COME OUT ONCE A YEAR IN CATEEL, DAVAO ORIENTAL...
Locally called "hipon", there is a superstitious belief involving this fish in Cateel. And the other day, myself and Jandee came across them in the market. We had both seen them once before with Mama Rose, but this was the first time we were able to buy some for ourselves and cook them! Speaking of cooking... our Filipino master Chef Jandee made two dishes with them. Banana leaf inon-unan, and torta pancake. It was a great experience getting a chance to cook with these rare river fish... that have no bones!
Philippines beach home life is back... and we are enjoying our days now here along the east coast of Mindanao.

    Jandee ia correcr.. You heat the banana leaves to soften the leaves making it a little flexible (for lack of vocabulary) rather than brittle(again for the lack of vocabulary) . It will not easily break if it's soft.. if you don't heat the leaves you won't be able to fold it like cloth.

    basic knowledge in local way of cooking and understanding harmony in ingredients.. if you grow up around local kitchen it is quite easy.. like you can use manggo leaves if you dont have banana leaves to wrap the fish..

    Bagoong isda (fermented fish) and bagoong hipon (shrimp paste) -ginamus isda. Uyap(bagoong hipon) on shrimp paste.

    Regarding the cobra or any other snakes, you might consider having some GUINEA FOWLS in your compound. Usually they make noise when they see a snake, that could alert you, and sometimes they also chase the snake.

    Ginamos is actually Bagoong in Tagalog. There's bagoong isda (fish) and bagoong alamang (small shrimps).

    We also call it "ipon" in Ilocos, but smaller and finer. Good to make it kilawen. Fermented fish in Tagalog is 'bagoong'

    Geek time! "Hipon/Ipon" fish are actually Goby fry (baby Gobies) they spawn in fresh water streams but drifts towards river estuaries even the sea until they are strong enough to swim upstream and begin another spawning cycle. Darn nosebleed overload!

    Wow!...my all time favorite!!!!this is the first time I saw you buying and cooking that little thing...the best dish is inun unan... yes!! and that torta fried..!lami kaayo.!! much... much ..hmmm kaon ta.. One kalderong kannn..tumba..taob...saraaaap??? Yes this kind of small fish is!! You can catch this all year round but easyly when summer time....in Tagalog call that "biya".. small biya.. and also become bigger..one... Ginamos.... here in Mindanao or visayan..for what I know..os your ginamos is One week??? only in one week get permented??? not unlike in balayan Batangas ,, pangasinan and ilocos...are more months to permented to become a good taste bagoong.. and have more a good taste fish sauce or patis...also..

    Ginamos in Tagalog is simply "bagoong na isda". In Nueva Ecija it is called "halubaybay".

    I love torta, that fish reminded me of dulong, you can cook it wrapped in banana leaves with kamias or crispy torta...

    Kulas, Gamos in Tagalog is Buro. Therefore Ginamos is Binuro. However, those living in Luzon has a slightly different process of fermenting small fish than in the Visayas/Mindanao. In Central Luzon, Binuro is fermented with cooked rice and fish or small shrimp, then a coloring yeast known as angkak is added that makes it red/pink in color

    Ung ginamos maraming asin kaya bagoong sa Tagalog un. Ung burong isda hindi sya nilalagyan ng maraming asin kasi dapat maasim ang burong isda. Pagkaraan ng ilang araw igigisa ung burong isda sa madaming bawang at kamatis at gagawing sawsawan ng steamed gulay at pritong isda.

    @@generosoabiul7577 Bagoong is the product. Binuro is correct for both product and process. In Central Luzon that is what it is called. Nonetheless Gamos and Buro are ethymologically correct which literally means fermented. What I was talking here is the process. My relatives in Surigao del Sur when they make ginamos, they don't put much salt. The process for each region in Visayas and Mindanao are different thus I understand the disagreement. Culturally there is no such thing as Bagoong Isda among Tagalogs. Its a misnomer. If Tagalogs say Bagoong it usually refer to the Bagoong Alamang or shrimp paste. The Ilocanos don't even call it bagoong but buguong and never really put bagoong alamang for their pakbet(pakbet is the dish which makes Pinakbet ethymologically wrong since it literally means "make into pakbet", a verb which is linguistically wrong while pakbet is a noun).

    When hawbing (preparing the leaves for food), be careful basin ma paso (burn). We used to burn dry banana leaves, holding the green leaves by the spine, being careful not to burn our fingers.

    We call that hipon in Butuan, Agusan Norte.. I miss that 😥 I haven't seen that here in Davao Occidental... often cooked as torta in serving sizes for extra crispy torta then paired with tsokolate and rice ! yummy 🤤

    I grew up in Chicago, and the smelt fish run every year, and practically the whole city shows up to catch them with nets, and then they are cleaned and fried to be consumed along Lake Michigan front. Butter and your dog 🐕 look alike. Practically all over the USA, we make tamales 🫔 and you could easily make them there with corn 🌽 flour and sauté pork and wrap them with banana leafs 🍃 to be boil in water for 30 mins, tamales 🫔 originated from the Caribbean Islands. 🏝 Have a nice one, guys.
