After finishing up my time in Yazd, my epic trip through Iran continued in the city of Shiraz! Come with me as I try two of the most famous dishes in Shiraz and explore this incredible Persian city!
My friend Mr. Taster and our friends at Kootook Travel would be taking me to Mahmonir Boutique Hotel to eat Kalam Polow Shirazi, which is a cabbage rice dish; a tomato-and-rice dish called kate goje; and falooda Shirazi.

As soon as we entered, we visited the courtyard, where they had a small pool where a turtle was swimming. He was beautiful!
After the owner welcomed us, he greeted us with a musk willow drink. Then, a woman brought out several ingredients, including white cabbage, potatoes, lambs, herbs, and rice. She cooked them right in front of us!
First, she fried some potatoes and then some little lamb balls. The cabbage, rice, and meatballs go in the pulao. Next, she took rice and mixed in onion, cabbage, vegetables, turmeric, basil, and dill. Then, she put some lavash on the bottom of the pan and then added the rice and the lamb balls.
She covered it, and then it cooks for one hour! Then, we tried some fruit from the owner’s father’s garden, including apricot and melon. They were so tasty!
Next, the woman began building the kate goje, which is rice with tomato sauce. It starts with the tomato paste, which was so tasty! She let it thicken before adding garlic, curry powder, turmeric, red chili powder, rice and water, and black pepper.
Meanwhile, they were also making a traditional Shirazi salad (tomatoes, cucumber, onion, sour grape juice, dried mint, and salt). We still had roughly 45 minutes to go before we could eat. Shiraz is the city of leisure, so you relax here!
We enjoyed some Persian tea with crystallized sugar. And finally, it was time to eat! The Kalam Polow Shirazi was full of herbal flavor. The short grain rice was amazing, and I loved the soft and tender lamb balls. The cabbage was also amazing! You can even add the Shirazi salad on top!
The salad with the polow took it to a whole new level! I was loving how unique all of the dishes in Iran were. The cuisine is so diverse!
Next was tahdig, which is a crispy rice dish. It had a nice crunch but was also charred and oily. It was fantastic! Putting the Shirazi salad on the tahdig elevated it, too!
Then, it was time to jump on the kate goje, which was very moist. The tomato sauce had been infused into the rice. It was comparable to a risotto, texture-wise, and the lamb in it was beautiful! I was at a loss for words!
Then, we tried some Iranian breads and sweets. They were really crispy. There was a dense, yellow saffron treat that I liked. Then, they gave me an amazing head covering that’s worn by nomadic tribes in the area. They were so kind and hospitable. Finally, we finished our meal with some chai!
Next, we walked through an old part of Shiraz that’s over 150 years old to our next location. The brick buildings looked and felt really old. We passed a lavash bakery where they were making tons of the flatbread.
Then, we arrived at a street vendor making faloodeh. It contained cold vermicelli noodles and a bit of lime, which you squeeze on top. It was cold and crunchy. I loved the texture and the unique feel of the noodles. They were very different from other faloodehs I’d had!
Next, he also gave us some amazing ice cream! It was perfectly smooth and creamy, with hard pieces of cream and pistachios on top. It was unreal! Some of the best ice cream I’ve ever had!

    I'm not sure if you already have it or are interested, but you are entitled to Iranian citizenship if you wish! It's probably not much use to you practically but if you'd like to preserve your heritage you have as much right to it as anyone born in Iran and will always have a home here :)

    I never and will never believe the hype about different countries we need to learn on our own the people the food the culture the history yes or countryside we all fight against each other some fighting is more intense some fighting is war back up but I think 99.9 of what we hear is BS it's scare tactics from both government and our government is a doozy and a half so if you can afford it you go over there and take a peek if you can't afford it or incapacitated such as I am then you watch David's video and you listen to and you find out on your own because your own mind and body will give you the decision on what's good and bad in the garden of everyone peace 🇺🇸☮️

    David, David, David: You really got me with this one. This is the first time I was literally drooling over these foods, I mean really. I had to keep swallowing for fear that I would drool like a baby 😂😂😂. Those two rice dishes were phenomenal and by the looks of them, DELICIOUS, too. Loved the flaky pastry. You could hear the crunch. As for the lavash, if you don't eat it, you can use it as a place mat 😁😁😁 because it is so thin and flexible like a tea towel. In Trinidad, we have a similar way of making homemade ice cream but the ice cream pail has a crank that we turn by hand. There is nothing more natural and better than homemade anything. It brought back memories of home. Isn't it amazing that no matter where you go in the world, something always triggers our memories? Anyway it was worth the wait for the food because normally it does take about two hours depending on what is being cooked, not like fine dining when everything is cooked in minutes. Glad to see you getting involved in the cooking so now you don't have to say "just pancakes" Lol 😂.oh by the way, you did a great job tying the head scarf 👏👏👏. So it's so long for now. Food always taste better back home because in North America or anywhere else other than your home country (mine being Trinidad now living in Canada), we have to be mindful of other peoples' palates, some of whom can't or don't eat spicy (not peppery) foods, so it would never taste the same. Even here in Toronto it's kind of hard to get real tasty curries just like in Trinidad. There is always something lacking, like fresh thyme, cumin, or even salt because a lot of people now have high blood pressure. So restaurant owners have to cater to a lot of different tastes. Too bad!!!🇹🇹🇨🇦

    I was wine tasting in France and there was an old French man in charge of one of the old wineries. I asked him does France have the best wine in the world. He told me no. The best grapes in the world is in Shiraz, Iran. I was blown away that this proud Frenchman told me that. Then he went on to say if the Iranian government were to change, Iran can have one of the biggest wine industries in the world. It's sad that the oldest evidence of wine making is in Haj Tapeh, Iran however they are not allowed to drink wine technically under this regime. That's like inventing the internet and not being able to use it.

    So happy to see you in Shiraz, I've been looking forward to this the whole series! Hope you had a great time there and thanks for the amazing content. The drink they gave you in the beginning is supposed to be mixed before drinking it because the syrup goes to the bottom of the glass as it's denser than water. So you were basically drinking straight syrup from the bottom which is why it tasted too sweet :) It's my all time favoruite syrup. Hope you get a chance to try it again sometime, and this time mix 😂

    I saw this video at the beginning of this month and I am back watching it again I love Mr taser and I love the fact you're in Iran showing us once again that we need to think beyond the hate for the sake of hate that is installed into our brains and step back and look what the country can offer you look at the food that you're reading oh my God this is pure heaven you are so fortunate to be able to convey to the rest of us what we are missing and that does not mean that all of us have to hop on a plane and Russia which I want no you can also find restaurants in the United States that serve Persian food if you can find them go and get some Indian food whatever but thank you thank you again for opening up or busy brains and say welcome my dear have some goodness and Mr taser you are unbelievable I would stay by your side and listen to you for like 90 days because you make me happy I've been so ill I had covid and I got bronchitis and I had a heart attack etc etc and you make me feel good and David you're beautiful face makes me feel content blessings peace 🇺🇸☮️

    we have more than thousand side dishes but it’s not nor never necessary to have any side dishes with Polo aka “rice” in any culture, been to India many times with my parents and had many indian friends back in the days back in Cali they had yogurt next to their food probably 20% of the time, in Shiraz they mostly eat their foods with Shirazy Salad consist of mostly Cucumbers, tomatoes onions, sometimes some small diced vegetables and spices, it’s different in every other city in Iran
