When you're going to cook at a high temperature like that it's better to use dried herbs rather than fresh. Fresh herbs are better to add at the very end of cooking because they don't stand up to a lot of heat. You'll get more flavor from the dried herbs. If you want to use fresh herbs just add them like the last 2 minutes just enough time to wilt them a little bit

If I eat potatoes in the summer, baby potatoes that is, I always boil too much on purpose, and the next day I'll make smashed potatoes from the leftovers. Just drizzle some olive oil on top (no need for salt, because you should salt the boiling water heavily) and some grated parmesan on top. Devine!

Tip: try using the tines of a fork, pushed down twice in a criss-cross pattern, instead of a glass. You'll get little edges on the top that create more surface area for crispy textures, and the uneven surface holds onto cheese, olive oil, herb dressing, or a dipping sauce better than the flat face.

I can still taste my grans roast taties from the 1970’s. Made with Taylor’s (local butchers, since gone) beef dripping, OMG. Staggering, and her Yorkshire puddings, both sweet and savoury. I’m sure these taste great, but they’re not roast potatoes, like the man said they’re baked. There was a lot wrong with British food 1945-1985, but the Sunday roast with a leg of lamb from Morecambe salt marshes, or Scottish beef. You could not go wrong. Glad to say Brit food is now on par with anywhere.
