I’ve finally found it - the perfect pastry recipe! For years I’ve been struggling with pastry that shrinks, collapses or is just pretty bad in general! But no longer my friends, this pastry recipe is perfect AND you don’t need to blind bake it!
Pastry Recipe
226g Unsalted Butter, Cold
160g Icing Sugar
112g Egg Yolks (6 Large)
1 Tsp Vanilla Paste
450g Plain Flour
Pinch Salt
The tart rings are from De Buyer. They are available online and from amazon! They come in all sorts of sizes but the ones I use are 4” in diameter!

I randomly stumbled across your videos on youtube, which brought me to your instagram account. I was so excited to see everything you've made and I love all of your creations! They're so inspiring! I also have to say that I'm delighted to learn you are self-taught. I'm in school for nursing and while I do like nursing, I can't quite say it's my passion. Baking, in all its creative glory, is what I've slowly learned is something that I'm passionate about. This year's my last year in nursing, and so I'm really going to devote my free time (now that I won't have mountains of homework) to becoming a better baker :) Thank you so much for sharing your work and your recipes, I am definitely going to challenge myself to try them!

Today I've discovered this channel and you're such a lifesaver (obvio in cooking terms) but no matter how much I loved your videos I can't resist to say that you do speak a lot like A LOT! One of my favorite desserts uses these shells! It’s called the Tahiti from Alexander’s Patisserie. I can only describe it as a vanilla lover’s ultimate delight. I’ll have to play around and see if I can come up with something similar. Thanks for the recipe!
Christ. I have been through a gagillion pate sucree recipes from Lauduree to old blogs and all I needed was a perforated tart ring. THANK YOU.

Just tried this recipe for a lemon pie and immediately fell in love with it. I did have to weight it down with grains, of course, because my pie pan doesn’t holes in it, but still, great recipe, thanks, buddy!
I use a similar parchment/rolling method for my sugar cookies and they are perfect every time!
Your recipe is geeenius. Tried it for the first time and worked right away :D

Question, I just got a ton of the rings and had no idea about the perforated mat. If I'm baking my shells without it, should I just peirce holes in the bottom so it doesn't balloon up in the oven?

Nice! Do you use icing sugar for the pastry instead of regular sugar to avoid the sugar from punching holes in the butter to keep the pastry from rising? Or is there another reason?

How can you make a eggless version of these?? Egg substitute please 😅
Instead of keeping eyes on your pastry while it's baked, u can place parchment paper on the dough, put in some beans or rocks or even rice to press it down. Then just wait til it becomes miracle with no worry about puffing.

Luong Tran Duc I think the whole point of this video is to be able to skip the weights and stuff because it's a pain. He said it doesn't bubble up, you just have to make certain they stay sticking to the pastry ring the first couple minutes. Beyond that, all the magic is in the prep work.

...or, put a baking sheet or pizza stone in the oven to heat up for at least 30 mins. Then using an ordinary tart case, line it with your pastry and put the filling in, and set it to bake in the oven on the heated baking sheet or pizza stone. Item is baked. No soggy bottom, no blind baking. Buy yourself a matching apron and glasses to put on, whenever you watch topless baker again....
My face when I saw vainilla somehow come out of a paint tube can't be described. Natural extract or bust.

Isn't blind baking the process of baking a shell before you add filling? So you did blind bake, but it didn't require weights.
Omg, he didn't Nae Nae after whipping away the extra dough. I thought he was a Top Baker. I guess he's only a Topless one.
