There's another BBC documentary (David Attenborough) where he discusses the same thing. Apparently, if chick is abandoned or the mother dies, either the kidnappers kill the chick while fighting over it, or if one really does get custody, it doesn't take good care of the chick due to the lack of a parental bond and the chick is either abandoned again or dies of neglect.

Yeah this recently happened at a zoo where two gay penguins kidnapped a chick. The zookeepers where able to retrieve the chick and give it back to the chick's parents. The gay penguin couple ended up being given their own egg to raise because the mother of the egg had recently died.

I guess you haven't seen the entire documentary on TV. The same chick's daddy never returns from feeding at sea, so the mommy penguin abandons the baby to take her turn and while the chick is shivering to death, a giant petrel swoops down and starts to eat it alive. The baby chirps and cries in pain as another petrel arrives and the two birds fight over the baby penguin carcass, ripping it into little pieces, the white snow all splattered with bright red baby penguin blood and guts.
