Patrani Macchi Recipe | Fish and Chutney in Banana Leaves | The Bombay Chef - Varun Inamdar

Ingredients
1 no (300 gms) boneless fillet of fish
1/2 cup sliced coconut
1 cup coriander leaves
Salt to taste
7-8 nos green chillies
1 tbsp garlic paste
2 tbsp lemon juice
1 tsp sugar
3-4 banana leaves
Water to adjust consistency
Method
- To make the chutney, blend together sliced coconut, coriander leaves, green chillies, garlic paste, sugar,lemon juice and salt mix it together.
- Add water if required & make it into a smooth paste.
- Cut the fish into thin long piece and divide into four pieces.
- Mix the fish with the green masala.
- Cut the banana leaves into little strips, make sure not to use spine of the leaf
- Wash the leaves and make sure the leaves are dry
- Heat the leaves lightly
- Place the marinated fish on the centre of the leaf
- Fold the leaf into an envelope
- In a sauce pan add water and keep a seive over it. Place the fish over the seive
- Steam the fish for 7-8 minutes
Patrani Macchi is ready to be served!

    I love how he's so happy and excited to do what he does. Well, I'm a parsi, and the recipe is great!! To all those who don't have access to banana leaf, a butter paper can also be used to cover the fish as an alternative. Also the white or black pomfret would be much better instead of basa.

    In Bengal also we have a similar kind of dish we call it paaturi but instead of coriander leaves we use mustard seeds.

    It is a very good presentation of Patrani Machi ( a Parsi Prepn) but I’m requesting Mr Varun for written names of Ingredients stage wise added in some convenient place on the screen. It will obviously avoid some confusion in identifying the right things added . It is just for convenience .

    We north eastern s roast very small fish in banana leaf with chilly and garlic paste. The smell of banana leaf gives all the flavours in the dish.

    The Bengali version uses a different fish (Bhetki) as well as a different masalas for marinading, thus the final taste is quite different. Btw, there is a Kerala version of this also, for your information...

    You could use fish with bones, if you wish so. Steam for the same time, as the bones also would hold some relative heat. In case you still have doubts, steam for another 2 minutes.​ ​But remember, the traditional recipe calls for boneless. So inform your guests , in case you serve fish on bone.​

    Since this is very similar to Bengali 'Paturi' recipe,i guess u can use gourd leaves (lau pata) instead of banana leaves
