For tests, "always roll 20" was turned on for everyone in toybox 'cause otherwise the game refuses to show log for ghost's failed "release from grapple attempt" checks.
Conclusion: Lann and Ulbrig are both good as grabbers but don't have the same kind of synergy that a rider with pet does. Bear kinda sucks because his Grabber is attached to Claws which is the 2nd attack for him which often gives the enemy time to cast a spell.
Smilodon should be ideal but is currently bugged and his Grabber almost never works.
Shambling Mound polymorph (Beast Shape 4) is overall ideal for pets atm (works for dogs and bears, bugged for smilodons, crashes the game). Dog would be the best option because he has the best STR+DEX and therefore highest CMD/CMB.

    The shambling mound dmg surprised me. Which of these do you prefer?

    Tbf, I never had room in my party for grabbers before. I was thinking of giving someone a bear this time now that the devs game them Grabber, but their practical use disappointed me (grab being tied to their second attack). A dev said that smilodons will be fixed in the next patch so I guess it's an interesting option because of pounce. Other than that, dogs definitely became a superior pet overall after the patch and in case you really need to shut down a spellcaster, you can always carry a couple of shambling mound scrolls in your inventory (which is what I will probably do).
