Pasta Grannies meets Nonna Maria from New Jersey!

Nonna Maria shares a typical recipe from Abruzzo: pasta alla chitarra with pallotte cacio e uova (cheese and egg dumplings) but with a twist. She has lived in America for over 50 years - so we went to New Jersey to see how Italian traditions continue.
For the pallotte use 300g grated cheese (parmigiano, pecorino or a mixture) and 300g bread, crusts removed, soaked in water and squeezed dry; 3 beaten eggs, 1 garlic clove crushed in a little salt. Mix everything together. Then fashion into a croquette.

    Omg i was like crying my eyes right now. My great grandmother made pasta by hand right up to her passing at 98. She taught every person in the family to make pasta. It was a huge honor that she taught my husband, then boyfriend, everyone in the family was unsure if she would be accepting but she just said he looks so thin and made him ravioli. She always said food brings us together. Now, my Aunt is teaching the young one and we are making a cookbook in her honor.

    I just want to comment that, on 1:23, what she says ist not that she misses the area, but the air :) I think it's important to underline because the air really is different in the place of your heart, it goes much deeper than the place itself ❤️

    I don’t understand how people can dislike this? This channel has quickly become one of my favorites. These beautiful women are making food that I would absolutely LOVE to eat. Their families are very blessed to have them. ❤️

    I find them too heavily edited and the narrator leaves out detail. They are too short and for all the effort involved not nearly informative enough. Pure gold information left on the cutting room floor. Almost criminal.

    We have this can opener that turns out belong to my great grand father its about 111 years old exactly this year and it's rusty old butt still opens cans better than than the new one for the kitchen

    Modern ''devices'' are not build to last. They are made to last just enough so the person can't return or call it defective. So the customer will have to buy another one. It's called planned obsolescence.

    Wow! I am swooning! Nonna Maria, you are blossoming with talent, and with love for your family and your art. Thank you so much, Vicky, for the important work you do, documenting these ladies and their gift. I am so personally touched with this video. This was just as my mom would do it. Maria even has the same Farberware pots. Mom is gone now, but next time you are in New Jersey, please come and meet my nonna Giovina from Abruzzo. She is 86, and from Vasto, and she will make you some Abruzzese style ravioli that will knock your socks off. She makes them every Sunday and has since she was first married.. My mother never weighed more than 100 lbs her entire life, and when she married my father, the first Sunday they spent together at my grandparent's house, my grandmother asked her how many ravioli she would like to eat for Sunday lunch. My mother said, "Oh, 9 or 10" and everyone still laughs about the story today. You see, the ravioli, as they are made in the province of Chieti, and surrounding areas, are quite large, nothing like the little ones made with stamps in other regions. A man might only eat two or three. I feel absolutely star-struck, having had you so close to my home. Thank you, Vicky, and I hope you had a good time here and in New York, and that you received a warm welcomed here by everyone you met. You are a true food genius and master documentarian.

    Abruzzese really are some of the greatest people you will ever meet. Abruzzo is such a hidden treasure in Italy not many people know about. Great food, landscape and of course people like Nonna Maria. Grazie Maria you are the epitome of Abruzzo's motto "Forte e gentile"!

    Frank Pelle I agree. All of my grandparents were from Abruzzi, and I got to do a short visit with my sons recently. Beautiful country with so many hilltop villages. And amazing food. Much like Tuscany, but without the damn crowds!

    Aww I wish my grandma was still like this she grew up in Italy and moved her when she was 14 but unfortunately she has very severe Alzheimer’s so she doesn’t remember a lot. But all the grannies on the channel remind me of her from a few years ago ❤️❤️

    I'm sorry to hear that as well. It is not fun to watch I couldn't imagine her having to go through it. You should try to make her some homemade pasta and see if it happens to bring back any memories for her, even if it doesn't I'm sure she would love it.

    My mother is a 87 year old Italian pasta granny that lives in Canada. She too does all her cooking in the basement! I was surprised this granny used canned tomatoes as my mother still jars her own tomatoes every September. She also grows all her own vegetables and herbs in the yarda (yard-north american word for garden with an A to make it Italo-Canadian). I love your channel Vicky, keep up the good work!

    When I saw the beginning of the video, I said to myself "this is her basement". Every one of my Italian friends parents and grandparents have basement kitchens in their homes. A regular kitchen upstairs, and in the basement, an old range, old refrigerator, and tons of counter space. Not much cupboard space. Also a plethora of large pots and pans, including old fashioned roasters (I have my grandmother's roasting pans). All of the major family cooking is done in the basement. It allows all of the women to gather, cook, and chat. It is a place for camaraderie to be sure. No men, ever! When I was looking at homes to purchase, I always knew if the family was Italian by the discovery of a second kitchen in the basement. So charming!

    I was so happy to see the pallotte in this video. They are a favorite of my family. The only thing I do different is to brown them before I drop them in the sauce. They act like little sponges and taste so good!

    She’s definitely a grandma in the US cause she’s got them country crock containers storing everything under the sun.     My Italian grandmother and all of her sisters (6) had basement kitchens.. and I am lucky to have the chitarra (guitar) made by my grandfather.

    I recently added nutmeg for the first time in my homemade tomato sauce and it was crazy delicious!! Well, at least for everyone except my husband. It’s a spice you either love or hate.

    My Nana came from Palermo and she did not care for the fresh pasta(except for gnocchi which she loved) and preferred the dry pasta al dente. She made the best Italian gravy, plain and simple but I can't duplicate hers. I love the fresh pasta and the dry. Both are good for different things.
