Rita, Adriana and Brunilde are friends who dance, sing and cook together. They are from Cingoli, Marche, and frascarelli is one of this region's typical dishes. It can be satisfyingly simple, soothing or spicy, depending on what you dress the rice with. Enjoy the episode.
Frascarelli: 4 litres of water, 800g arborio rice, around 40g of plain flour (it depends on how thick you want it), a generous pinch of salt.
For the sausage dressing: wild fennel herb - if you cannot find this, use a teaspoon of freshly ground fennel seed, chervil herb, or some parsley; white wine, olive oil, 3 large meaty Italian sausages crumbled, a pinch of peperoncino, 400ml passata
For the guanciale: 50g lard or bacon fat, 150g of guanciale or pancetta, one carrot, celery stick and onion, one 400ml tin tomatoes, plus 300ml of passata, peperoncino to taste.

Wonderful video! Grandmothers cooking together & dancing in the kitchen, serving up rice on a board with tasty sauces, (cucina povera style because of the lack of crockery) whether for a communal meal/party, or as mentioned, for invalids or children... even the smallest details, such as rinsing out the jar of passata with a bit of water, so as not to waste anything...all demonstrate the wisdom of & what a treasure these women are. 💞

I have always said it.... in Italy you always discover new things, surprises never end ! (and this of course also applies to us Italians). 😊 PS: This one we saw in this video, I had never seen it.
There is great pride to be taken with raising children and working from home! This is a lovely group of friends! ❤

Huge fan of Italian sausage [especially the sweet one] with fennel. Even just a little bit can really bring a plate of food to life.
What a beautiful aura these three angels have! God bless them with health so they can continue spreading all that joy!

Great trio of ladies & so much energy & joy for life. Your beautiful looking village is lucky to have them involved in the local groups. Love that cherry wood polenta board. You could see the beautiful grain pop when they oiled it. Puts the little wooden trenchers we Brits used before crockery became common to shame. Though I imagine many newer generations would shy away from food that everyone sticks their fork/spoon into again & again. I've been on the hunt for getting a couple of pieces of guanciale delivered at the moment. Have a few recipe ideas [from your books] for over the Christmas period. Brilliant stuff & a few UK pig farmers have started making it. Brilliant as always, bringing a little Italian summer sunshine into a cold, wet UK winter.

Hi James, it's rather dreich day in Cingoli and those cicadas are a happy reminder of summer. Well done in tracking down guanciale in the UK - I've been impressed by British charcuterie over the last few years. There are some excellent pork farmers out there! best wishes, Vicky

Ricetta interessante, ma sconosciuta fuori dalle Marche, credo. Amazing recipe, but unknown outside Marche region, I think.
How wonderful it is to hear the dialect of my family!! We never made frascarelli. I gather it was more of an inland experience thing.

We live in Ostra Vetere for half the year. Before our neighbours died they gave us polenta served this way! Love your program I have learnt so much from these wise women 😍

Growing up, my parents made polenta and poured it on a big board just like this! We served it with a traditional ragu sauce and all dug in with a fork! It was always so “weird” to other people outside our family, but I loved it!

I love these ladies! Keep dancing! I can smell the wild fennel from here. Everything is better with a bit of wine and guancale, too! You live in a beautiful town and these women only make it better. My covid be in everyone’s rear view mirror so they can resume their yearly festival. Another great episode!
