Party JOLLOF RICE with cured lamb shanks- step-by-step guide to elevate your jollof flavors

INGREDIENTS AND INSTRUCTIONS:
* 4 lbs lamb shanks cured over 4 days in the fridge with the following ingredients: 1 tsp whole cloves, 3 star anise, 6 cloves of grains of selim which may be substituted with 1 tsp black pepper corns, 6 bay leaves, and 4 tbsp salt
* Wash cured lamb shanks thoroughly, and place in a cooking pot. Then add half a cup of chopped onions, 8 Thai chili, 1 liter water, cover, and boil on medium heat for 40 mins or until tender. The separate the lamb from the broth, strain the broth for later use.
* Brown lamb in same pan for Jollof with 6 tbsp of cooking oil, then add 1 tbsp of curry powder, 1 cup chopped onions, and 6 cloves of garlic minced, and continue cooking for 2 minutes or until onions are visibly grilled. Then add about 4 tablespoons of tomato based stew from previous video, stir to coat the lamb shanks, cover and cook on medium low heat for 10 mins, then remove lamb shanks and keep warm in the oven till serving time.
* In same pot, stir fry vegetables, beginning with carrots, deglaze with some lamb broth as needed. Add rest rest of chopped vegetables: 1 each red and green bell peppers, 1 onion, and 1/2 small green cabbage. Season vegetables with preferred seasonings. Stir fry vegetables on high heat for under 3 minutes, and at aside.
* In same pot, add 2 tablespoons of cold pressed coconut oil, and washed jasmine rice (5 cups), and toast till dry, and add 3 cups of previously made tomato based stew and remaining lamb broth, stir, cover and cook on medium low heat for 15 minutes. Stir, and cover with a parchment paper and lid, continue cooking on low heat for an additional 30 - 40 minutes, or until rice grains are cooked through and fluffy. Stir on the 20 minute mark and sprinkle a scanty amount of water as needed for crunchy rice gains. When the rice is cooked through, gently fold in 3 chopped Roma tomatoes seasoned with salt, and stir fried vegetables, turn eat off and serve with warmed cured lamb.

    Eiiii ataam3!! Meni sane n3?😂😂 These shanks were what i was thinking of, for my jollof gift for the employess at my neighbourhood supermarket that helped and loved on me so much when i was sick!😮 One of them asked for , and I quote "GHANA JOLLOF" becos, apparently, she had heard about the 2 playful jollof wars, and when she found out I'm from Ghana, she promptly asked for it, but i was too sick to do anything..so i decided to surprise her, to share with the rest of the employees, with one of my sis Nanaaba's recipes, but i wanted some good shanks for the meat, and voila, here u come with the shanks! How did u know??!😮😅. Im a happy girl right now! Oyiwala donnn! Nyonmo adzor bo k3 oshia f33!! U disappeared on us for a while, but i knew u were cooking up(no pun intended😅) something nwanwa-ful (like my funny mama used to say) for our X'mas spread! This will accompany my cinammon rolls(buns) i have in mind for them..Now, i know im going to be causing some crazy chaos in that store..😅😅Those poor customers, and that poor manager! Now i have to go and look for the lamb shanks, i dint know where, but, by gosh, I'll try!

    Hi Nanaaba, I once made some of your dishes for a Ghanaian birthday party, I didn't want to arrive empty-handed. I worked so hard to make sure I followed all your instructions. The dishes turned out perfect and were packed, ready to be collected by one of my friends. I was so excited for them to try your dishes and to tell them all about you and how your recipes are a delight to eat! Nanaaba, I waited and waited for her to come. It was getting late and still, she hadn't arrived! I began calling and calling, but no one came. The food remained at my small flat. I was so hurt and decided not to attend the party; as I now felt very offended. I was later to find out that they were laughing at me saying, "What does she know about African food! She betta Leave dat food der oh!" I don want to get poison!" And they all roared with laughter; agreeing with what was said!! Can you imagine dat! I felt humiliated! And I thought they were my good friends! I was told it was because my people are from The Nature Island of Dominica, West Indies (NOT the Dominican Republic) THEREFORE, I couldn't possibly know ANYTHING about how to cook African food! And that it was bound to taste terrible!! Would you believe that! I'm not a beginner cook Nanaaba, I can actually cook. The next day, I stored the food in containers and placed some in my freezer as best I could, but it was too much and I ran out of storage and people to offer it to, so I had to throw some of your wonderful food away! That broke my heart SO BAD!!! I didn't realize there was this kind of snobbery among Ghanaians. Well, it was their loss, right? Because ALL your dishes are FIRST CLASS, PREMIUM TOP QUALITY, A LISTER food! I will continue to cook your amazing dishes, but next time I will be very choosy about who gets to eat it. They are no longer my friends.

    I did it! My jallof rice was sooo good! Except, i tried with brown rice first which did NOT turn out right 😢. I didnt give up though. I redid it with white rice thia morning and it turned out perfect 🎉. Any advice when uaing brown rice?
