Panettone is the most iconic Italian Christmas recipe, a delicious buttery fruit dough so rich in flavor! The traditional Italian Panettone is very difficult and long to prepare, made with sourdough, but with this easy recipe everyone can make a very soft and fluffy Panettone in a super easy way without a stand mixer, without kneading and without mold!!
I show you how to make an easy homemade panettone mold!
This recipe requires from 8 to 24 hours depending if you want to let Panettone rise in a warm place or in refrigerator.

    Honestly the BEST panettone recipe I’ve ever made!! I’ve made at least 5 panettone recipes (one with sourdough started weeks before that was a total fail) but I was never satisfied with the texture, dry and thick, or the flavor. This recipe was the best Christmas gift: the homemade mold is perfect (just challenging to place the mold ring all over the dough, but I succeeded in the end) and the flavor OMG!! It was heavenly!! You did such a great work with this video, thank you so so much!!❤

    This one’s a keeper recipe. I’ve made it over 2/3 days before with a Levito Madre and it’s a Labour of live to be gone in about ten minutes. I like how the dough gets the overnight in the fridge to make everything meld and give that special flavour. Making this tomorrow . Happy Christmas everyone ❤

    It turned out OK. The paper mold was a fantastic idea. My mixture was a bit too sticky and took longer to cook but that was my fault. Should have mixed it longer but I will improve the next time. Its a learning curve 😂

    Yes and no. Do you have a baking pan so tall (about 17cm diameter and 11cm high)? If yes, yes you can. If no, it depends on the size of your baking pan because it’s a large dough….if you make a larger but thinner panettone it will be less fluffy and it will bake in less minutes.

    Ciao Valentina, Come Stai. With all that folding you don't have to kneed the dough :⁠-⁠D. So glad you didn't use the mixed candied fruits. Orange and raisin is enough. Why not use the water from the raisins for the cake/bread.? What do you consider this, a bread or cake.? I consider it delicious. I am more partial to the chocolate chip one.     Hi Edward! It's impossible to knead a sticky dough like that without a stand mixer and the folding method is easy: only 2 minutes for every fold series! The raisins water is too sweet and sticky. In Italy we consider Panettone a Bread!! I chopped my whole candied orange in large chunks ;)

    No, I suggest to use water to get a lighter texture. In Italy Panettone is a bread, and very rich because it features yolks and butter in generous amount, so it’s made with water. You don’t need to add extra fat with milk, it could turn out more dry in texture. Happy baking! 💕

    Hello! Yes, you can surely just skip raisins if you don't like it. But for chocolate chips you should pay attention because they tend to melt since the dough should be warm when you make the folds. I suggest to use dark chocolate chunks that are larger than chips and keep them in freezer before adding to the dough. Happy baking!

    Yes you can use chocolate chips, but I suggest to use chocolate chunks and place them in freezer for at least 1 hour before add them to the dough!

    Hello! No, I suggest to use a strong bread flour with 13-14 g of protein I’ve used in my video. All purpose flour is not a good choice for this recipe.

    In Italy we ask “team Pandoro or Panettone?!” In every Italian family during Christmas season we both have Pandoro and Panettone…I love Pandoro too! But I know it’s not easy to find Pandoro mold out of Italy, and we can’t see a Pandoro without its star shape 😅 I hope to share the recipe as soon as possible ❤

    I love to try out this recipe, I'll be using instant dry yeast, your recipe calls for many hours in the fridge for it to rise, can I just let it rise at room temperature? I'm sure it can completely rise within an hour, anyway why let it rise in the fridge, what's the difference, appreciate your advice, thank you

    Hello! The higher is the temperature, the more fast it will rise. If you want to let it rise faster, put it into slightly preheated and turned off oven. It’s ready to bake when it almost reaches the mold edges. A long leavening in refrigerator gives a better flavor, a more digestible and soft Panettone. If you decide to put it in refrigerator to rise, consider that when you are making the folds (so the first 2 hours because you should make 4 folds every 30 minutes), you should place it into a warm place (like the turned off oven) so the heat activates the leavening in this first 2 hours.
