Pancakes With Strawberry and Crème Fraiche

Here's the perfect Sunday morning treat. A healthy twist on a breakfast option enjoyed by all!
Serves 4
Prep time: 5 mins Cook time: 10 mins
Ingredients
• 150g self-raising flour
• 1 tsp baking powder
• 1⁄2 tbsp coconut sugar
• 1⁄2 tbsp vanilla extract
• 200ml almond milk
• 10 strawberries
• 4 tbsp oat crème fraiche
• Low calorie oil spray
Method:
1. Add flour, baking powder, coconut sugar, milk and vanilla extract into a blender and blitz
until smooth.
2. Heat a few sprays of low calorie oil spray in a frying pan and bring to a medium heat.
3. Add a ladle of pancake mix to the pan and cook for 3-4 minutes until the pancake starts to
bubble.
4. Flip and cook for a further 2-3 minutes.
5. Keep warm under tin foil until all cooked.
6. Serve with oat crème fraiche and some sliced strawberries.
