    Al poble alacantí de Tàrbena, hi ha un restaurant magnífic al mig de la muntanya alacantina, "Ca's Pelut" on fan unes paelles vegetals molt bones. Aquest video m'ha recordat allò.

    ¡Hola Omar! A friend of mine who lives in Alicante told me to put first the water/stock top it up, and when it reduces until you see the screws of the handles you have to put the rice in the paella forming a “bridge” or a “cross”. It’s ok like this? Thanks!

    Technically yes, but I'd recommend you don't do that. The reason traditional paella puts the water before the rice is cause it uses water, not stock. Thus, it's necessary to turn the water into a stock first by boiling all the ingredients (the "sofrito") and letting it reduce. Why wouldn't I recommend it? As you can see in the video, you sear the rice first, and for that you need to add the stock *after* the rice, but there's another reason. For paella, it's necessary to get the water-rice proportions just right. If you add water first to reduce it and create your own stock you can easily end with too much water, or too little, winch can result in under-cooked rice or in over cooking the other ingredients. If you go rice first, liquid afterwards, and use stock instead of water, your paella may not be 100% authentic-traditional-correct (people from Valencia can be absurdly nick-picky) but it'll be harder to mess it up and the results will be just as good, if not better.     GerackSerack Thank you very much. So the traditional way is creating the stock in the paella. I’ ve already managed to learn the hard way, so now I’m afraid to try with fumet 🤣🤣🤣 but I’ll definitely try putting the rice first. Thanks again!
