Curd or Dahi is one of the most cherished dairy products by us Indians. But which curd do you use? Amul, Mother dairy, from a regional brand or from the local dairy? Basically, which is the best curd in the Indian market? Let’s find out.

Curd not only amplifies the taste of any meal but also being rich in calcium, probiotics and protein, it is among the top strength giving foods on the planet. But is it true for the packaged curd that we generally buy? To find out the best curd in India, I have thoroughly researched about all the options available and have categorised them into 4 categories.
00:57 - CATEGORY #1 - The most popular packaged curds. Be it Amul masti dahi, Mother dairy dahi or whatever local brand that is available near you.
02:57 - CATEGORY #2 - Curd sourced from a local dairy. I tried setting the curd using the same milk but two different active cultures, one from the local dairy and other from packaged curd. Results were shocking.

    From last 50 years , we have never bought milk , curd etc milkmade product bcoz we've kept a cow , 2 are sahival & 3 are desi ❤ we didn't face any problem ! And yeah I've a joint family 19 member in my family ( father + 2 uncle + 2 Aunty + 3 sister + 5 brother including cosuins + 2 grandmothers + 2 grandfathers )

    After starting using A2 milk, I have been setting curd on my own! I can confirm that on days whenever I use the active culture from the packaged curd, I do sometimes see it isn't well set but that rarely ever happens while setting curd using culture from curd I had previously set.     You missed the main point. Never let the curd or buttermilk touch a steel/metal container. The bacterial cell wall gets disrupted because of the free electrons present in the metal. So it’s best to you a earthen pot to set the curd. No metal spoons as well.

    I want to add one more thing in your information is that these local venders uses less fat milk and add cornstarch to make curd thick and we'll settled. Because it gives them a lot of profit as they sell ghee or cream separately and skimmed milk in the form of curd.

    Hello Vivek, thanks for the very informative video. I have two questions regarding this. One, I live in Germany, with difficulty I found a farmer who is selling raw cow milk and these cows are not injected with hormones. But they are most probably A1. He doesn’t know the difference, but they are huge really big cows. I don’t think they have Desi A2 cows or buffaloes in Germany. So is it ok if I use that milk? It has so much fat and the Dahi I set with that milk is so yumm. Second question concerns my conscience. It is a common practice that calves are separated from their mothers under the premise that they over drink the milk and get sick. I don’t know how far this is true but I think cows don’t need humans to teach their calves when to stop drinking. Am sure they have their own system to regulate the calves. So I find it very disturbing to see that calves are sitting far away and screaming for their mothers. It is emotional abuse. I don’t feel good consuming that milk. What is your perspective on this?

    i have the same question. I dont have a dairy farm nearby so i dont have access to full fat milk. The max is 3.5% fat which is not good for curdling. In addition the temperatures are mostly under20 degree celsuis. How can we still get to the process of making curd?

    @@rocksneha059 I usually set the oven to 50 degrees Celsius, turn it off and leave the bowl in the oven in that heat. That helps. I also add one dry red Mirchi in it, that help too. Keep the milk warm enough. If you have access to Kefir (type of yogurt) use that as starter.

    Milk solids mean milk powder. It can be low fat or full fat depending on recipe.

    My observation.. Amul curd is thick but there is speculation that cron powder used as thickner. Also generally curd leaves some water around it. That is not a case with Amul. The brand in Maharashtra Mahananda curd appears to be real curd as when opened it is bit watery. So I have stopped consumption of Curd from Amul.

    Brothers water on surface depends on weather and temperature of storage and transport in packed dahi. Amul is using dried milk powder to provide increased protein and lactose content. Which can help to increase prebiotics and firmness in body.

    Fantastic video brother. I'd like to mention that you can make curd without heating up the milk. I personally leave raw milk in room temperature for 36-48 hours until it sets. I've eaten this "raw curd" for 2.5 years without any problems whatsoever. You seem to be well aware of the effects of pasteurization. I can personally tell you that after researching the topic very thoroughly, I've found that high quality raw milk never makes anyone sick.
