Grilled Halloumi & Eggplant Sandwich:
"This sandwich is great for wrapping up and bringing on the go, and makes for a delicious lunch or picnic dinner. Here I layer a baguette with sun-dried tomato pesto, grilled halloumi cheese, marinated grilled eggplant, and lots of baby arugula. Although a baguette tastes best and makes it easy to make 4 sandwiches (or 2) at once, you can swap the bread with a soft Italian sub or focaccia if desired." -Nea Arentzen

Halloumi still is extremely underrated imo. It's so versatile!
I love eggplant and this recipe looks great!
I like to chop and freeze leftover herbs.
It is perfect - no more words.
I made this and it was SO good! And it’s perfect for the summer. I love that you can make enough for multiple people and it’s veggie-friendly. One caveat - watch out for your sundried tomato pesto. The first one I tried was too salty. I think the rest of the ingredients have enough salt, I’d recommend leaning towards a sweeter type.
Yuuuuummmmm! It's winter in Australia but I would still smash this for lunch any day. Halloumi is delicious, a little on the expensive side here but worth it 🥪✨

Halloumi burgers are so good. But it's expensive here in Canada. (Easy to find, but expensive.)

Why us that sandwich so long? lol. I love when I am in other countries, halloumi sandwiches are everywhere, but I never see it in the U.S. sadly
