You can do do this too, bro. It’s just like anything else. Takes practice and trial and error. You don’t necessarily need a $1000 grill but it does make things easy. $100+ brisket helps also, but work your way up.

That's a good looking brisket , here in Texas the briskets are full of fat and barely any lean meat and the cost is ridiculous . I know that they're cutting the briskets this way . I guess that we must start back to farming. ❤
