50 years ago when I raised a huge garden, I grew all the ingredients for stewed tomatoes: tomatoes, onions, green peppers and celery, in my Connecticut garden. Making stew in the winter, after working in a factory all day, sure was a terrific reward for all my hard work

Oh boy this make me long for fresh corn. Years ago I lived in a large household of 12 people and we worked together to put our food up and our favorite was corn. We'd go buy a trailer full of corn from a local farmer, but froze ours after blanching it instead of canning. The best part was shucking the ears, endless corn jokes, silk beards and hairstyles, working with others making it fun and eating all the fresh corn on the cob with butter we wanted. 💕

We just froze 14 ears of Silver Queen 👸 white corn. Full ears with no waste from worms or other issues. Can't use til winter snow days or frost that kills all veatation. My late mom's rule not ours. My mom lost a lot of pint jars of corn, as I look back she had no pressure canner and I think that was why a black bacteria formed and popped the lids off.

Great info!! You might want to mention, that the Presto Pressure Canner has a flat bottom and it is the only one approved for a glass top stove. Most glass top stove manufacturers, don't approve pressure canning on the stove due to the weight and movement or vibration of the pressure cannier during the process. Frigidaire is my glass top stove and they approve the Presto Pressure Canner.

Hi Jen and Zach, thank you for all you share and teach. I grew corn once in my 20’s, I had the water ready before picking it. I ate it on the cob before getting it to the kitchen. 😂 Oh my goodness fresh corn is so good. My neighbors found me entertaining, I thought I could dig my garden with a shovel. I jumped up and down on the shovel all 128 lbs it did not budge. I heard my neighbor laughing his tale off. 😂 He asked if I wanted to use his tiller. It ended up with him tilling my garden. I lived in Tennessee at that time. Bet the neighbors were telling blonde jokes. 🤣

Love my AA canner, but will say that I recently purchased a used electric Carey canner and have quickly grown to love it as well. Using the Carey this evening after work to pressure some left over soup. I would have never bothered canning a small amount, maybe 4-5 pints, I would have just froze it. Our freeze dryer has been going constantly as well, lots of zucchini and sliced tomatoes.

When I have extras, like the corn, or tomatoes, just anything, I freeze it then find recipes to add them to; ChowChow, Salsas, relishes and more. For fruit you can make Conserves, mixed fruit jam. Peach, apple and most fruit peelings can be boiled with some water, strained and made into Jelly. Tomato peels can be dried and ground to a powder for adding to soups, stews, and such. Same with a variety of peppers. I love your channel and that you teach, rather than talk. Have fun camping! I have never canned corn before, but with the way things are going these days, I thought I would give it a try. I went to a local farm and bought a whole crate of corn (48 ears) and I'm going to can it in pints. I have canned green beans, carrots, white potatoes, sweet potatoes, yellow squash, tomatoes, made pickled squash, pickled okra, pickled cukes, canned chicken, pork, beef, beer brats, and venison. I have also canned vegetable soup, chili, pinto beans, and cranberry beans. I just planted another late crop of green beans, so if the Good Lord is willing, I will be canning more of those. I also planted more yellow and zucchini squash.

I canned 30 pints Saturday and getting another 4 dozen ears this coming Saturday. I do mine raw pack, I think it tastes more like fresh.

I love the fact that you can process so many jars in your canner, but my canner was my grandmothers from 1946! I still have her sales receipt. I hope I can use it until I have to pass it on.

If it is a Presto, call Presto on thier 1-800 number to ask. Yhe gasket and pressure relief valve need to be replaced every so often.

@@terryhenderson424 Thanks. I did when I first inherited it. Not only did Presto have the new weight and gaskets I needed, but for the cost of shipping the lid to them; replaced it for me and sent it back. I had our county extension office check it out and it was deemed worthy. I've used it ever since.

@@robinfuller3721 Isn't that an awesome thing! Not only is it something heirloom, but they really build things to last back then. I think it speaks volumes that these canners are still in use 80 years later

@@dianebeckner884 We bought a golden oldie (12 qt Harvest Gold, lol) for $2 at a yard sale and I was impressed with Presto's customer service when I called about it. Your story truly makes me impressed with them.

Instead of canning lately, I’m dehydrating and making dry soups. We have a dry canning attachment. We also have stews, beans, tomato sauces, and tortilla soup pressure canned. Pressure canning corn is great, but I want meals ready. Just add water. You guys are awesome! Thanks for demonstrating the correct method to pressure can. Much love! 💕
