In this video, Roland will show you how to prepare potatoes with minced pork which is quite a common dish available at economic rice stalls in Singapore. For those of you in Singapore who have been eating home-cooked food by your mom or granny since young, I guess this dish is not unfamiliar to you.

Ingredients:
Serves 4
1kg of potatoes - sliced & soaked for 20 min
250g of minced pork (marinated w/ 1 tsp of salt & some pepper)
6 cloves of garlic - minced
2 cups of water
3 tablespoons of oyster sauce
2 tablespoons of low sodium light soya sauce
1 teaspoon of sugar
1 tablespoon of sesame oil (can be reduced to 1/2 tablespoon)
2 tablespoons of premium dark soya sauce
1 tablespoon of Chinese cooking wine
Some cornstarch solution to thicken up the sauce

    Cooked this today and it was so delicious! I added onions to my dish. I actually wanted to pan fry the potatoes first before adding to the minced meat, but I was in a rush and ended up just putting raw potatoes in like what Roland did. It turned out great and potatoes are still fragrant! Healthier too! Thank you for your recipe, Roland and Jamie!

    Very good recipe. However I used carrots to add sweetness instead of sugar. 😁 Next time I am going to try to cube the meat into small cubes instead of mince meat. See if the texture will be nicer. 🤗

    I always used to pick this dish whenever I had my Chinese chap fun (mixed rice). Another dish I love at the chap fun is the red beans preparation. Could you please include that in your recipes the next time. I can't seem to get it right at home. Maybe I'm missing something...

    So glad to have stumbled upon your KZread. Your dishes has made meal times something I so look forward to. May I ask if I can omit OR reduce the amount of potatoes altogether? Will the amount of seasoning be the same if I do so?

    I used to cut the potatoes in cube size and stir cooked until they slightly brown first before adding to minced meat.

    Thank you so much. It’s a cast iron wok by La Gourmet. It’s slightly above $100 and you can get it from major departmental stores in Singapore such as Tangs, Metro, BHG, Robinsons & Isetan.

    I tried out this recipe & it turned our well with minced pork. Any tips? If i were to use sliced pork this time any tips? Like if i use 500g potatoes instead of 1kg do I still use 2 cups water cos Sliced Pork do need more water in order to braise & stick with Ratios of the Sauce? When do I add in the potatoes, once when the pork is tender or at the beginning? Cos I am cooking this for adults & they prefer sliced pork. Thanks if u can reply.

    Hi Lilian. Do choose a tender part of the pork, for example waist meat if you want to use sliced pork. Slice them thinly too. Cooking time and water to be used will be the same. However, if you are reducing the amount of potato used by half, you can reduce the amount of water by half a cup.

    Hihi. We used KCT - a brand from Singapore. We are using their chicken rice soya sauce. Very thick. Not too salty too.

    I used the elephant brand dark soya sauce. Light soya I use lee kum kee low sodium light soya sauce and elephant brand light soya sauce (green cap).

    Hihi. The machine is known as Magimix. We got it from Singapore. I believe it’s sold in all major departmental store chain in Singapore. This food processor is made in France so if you’re not from Singapore, you can see if your love department stores carry them. Happy shopping!

    Is it better to Panfry the Potatoes first until light Golden Brown before simmering in the Stew? Cos we don't like our Potatoes Mushy.

    Good morning. If you don’t like your potatoes mushy, I suggest to add the potatoes much later. As the potatoes are sliced thinly, they should be cooked fairly fast. Maybe about 10-15 mins depending on the strength of your fire. No need to pan fry the potatoes first. Happy cooking

    Spice N' Pans Ok i thought panfrying would make it taste better something like Macanese/Macau Minchee? If i were to add in the Potatoes later when should I add in after stir frying the minced pork? 5 mins later after stir frying the minced pork & adding water? So that means add it in last 10 mins?

    You can just add until you can the gravy thickness that you want.

    Hi Amy. You can mix 2 teaspoons of cornflour with 2 teaspoons of water. Mix well and then you can use it. If the cornflour doesn’t dissolve nicely, add a little bit more water. Hope this helps. Happy cooking!
