Chicken Chapli Kabab Written Recipe With Directions:
Ingredients for Chicken Chapli Kabab:
-Chicken mince (qeema) 1Kg (750 gms chest boneless and 250 gms thigh boneless)
-Black pepper (kali mirch) ¼ tsp
-Carom seeds (ajwain) ½ tsp
-Cumin seeds (zeera) powder 1tbs
-Red chilli flakes (koti lal mirch) 1tsp
-Salt (namak) 1tsp or to taste
-Dried coriander (sokha dhania) powder 1tbs
-Clarified butter (ghee) 1 tbs
-Tomato (tamatar) chopped and seeds removed 1
-Garlic (lehsan) 9 cloves
-Ginger (adrak) 2 inches
-Fresh mint (podina) 2 tbs
-Fresh coriander (dhania) 2 tbs
-Green chillies (hari mirch) 3
-Onion (piyaz) chopped and water removed 1 big
-Wheat flour (gandum ka atta) 3 tbs
-Eggs (anday) whisk well.
Ingredients for Green Chatni:
-Fresh Mint (podina) chopped
-Fresh Coriander (dhania) chopped
-Green chillies (hari mirch) chopped 4
-Lemon (nimbu) ½
-Salt (namak) ¼ tsp or to taste
-Yogurt (dahi) 250 gms
Directions for Chicken chapli kabab:
-In a bowl, add chicken mince, black powder, carom seeds, cumin seeds, red chilli flakes, salt, dried coriander powder, clarified butter, and tomato.
-In a chopper, add onion and chop well. Squeeze well with the help of the hand. Add the chopped onions to a mince.
-Now, in a chopper, add ginger, garlic, fresh mint, fresh coriander, and green chillies and chop them. Add the chopped mixture and wheat flour to mince. Mash well with the palm of your hand for 7-8 minutes. Mash until well combined.
-In a bowl, take eggs and whisk well. Take a frying pan, add cooking oil, and fry the omelet from both sides. Set it aside and let it cool.
-Now add eggs to the mince mixture and mash well.
-Cover the mixture and place it in a refrigerator for 1 hour.
-Take a griddle and heat the oil.
-Dip hands in water. Make patties of the mixture and add a tomato slice on top (optional) and fry on the griddle. Fry each side of the kabab (when changing the side of the kabab, press it gently). Flame should be medium to low while frying. Total frying time 7-8 minutes.
-Take green chillies, cut them from the center, and fry them with the kabab.
-Serve chapli Kababs with green chatni and fried green chillies.
Directions for Green Chatni:
-In a pestle, add fresh mint, fresh coriander, green chillies, lemon, and salt. Make a smooth mixture.
-In a bowl, add yogurt and the mixture. Mix well.
-Place it in a refrigerator and let it cool.
Tips and Tricks:
-The use of ghee helps in binding chicken chapli kabab and also makes it juicy.
-When adding a tomato slice on top of the kabab, place the tomato side on the griddle first to fry so that it can fix properly in the kabab.
-You can also use a plate to make patties.
-To make round shape kabab, make the ball of the mixture and press on the palm of the hand to make a patty. While to make long shape kabab, make a roll of the mixture and press on the palm of your hand to make a patty.
-To make good chapli kabab, the mince mixture should be cool.
