Hey Matty. Thanks a lot for these videos, they're excellent. I have a question for you: Combining the information from this video and your sports drink video, I'm trying to create a sports drink I can take with me to the gym. Problem is, I could not find a fruit that's so high in glucose over fructose. The information about that on the internet is seems quite unreliable. Can you share with us a few recipes, or at least which fruits are high enough in glucose/fructose ratio to be good in sports drinks. Thank you in advance.

What about fat also in process?

Fat slows down the absorption of carbohydrate. So if you are in a situation where you are wanting to maximise carbohydrate absorption you are best to minimise fat intake.

Hi Matty. Can I fuel myself for a 120 km handicap cycling race that will take 3.5 hours using drinks only?

Yes you can as long as you get your carbohydrate intake correct.

if i eat 100g of carbs in one meal, 60g will be absorbed and the other 40g will be turned into fatty acid?

If you consume over the 60g only 60g will be absorbed and the remainder will be held in the GI tract to be absorbed when transporters become available. In exercise this is where the trouble comes as this build up can cause GI distress such as stomach cramps, diarrhea and bloating etc.
