    Two tips I could give, you should tear a small hole or two in the top to let steam out, and adding the sauce to the top of the calzone as well will help to alleviate some burning. In a big oven you would cook it very far from the flame, potentially with no flame. So I wonder if in a small gas oven, turning the flame off completely would be a good idea?

    You may want to brush a little olive oil on the top to protect it

    Long time lurker and watcher, really impressed and haven't made calzone in ages. Looks really nice, I like the nice little burn on top personally (on attempt 2). Will have to give it a go again. Thanks for your videos, have you thought about getting a Dome at all?

    I loved calzone as a kid! Definitely like to give a go in my koda 12, just wondering given you hot all the ovens which one best for calzone?.

    I routinely struggle with the Ooni temp, so I actually turn it off once I launch a pizza, then fire it back up after the first turn and it works great. Wonder if you could do the same with the calzone: launch, turn off, then try to guard the opening so it doesn't cool off too quickly. Refire after a few minutes once the base/interior has heated up. Thanks!

    Hi - comments above have reminded me there is an even lower simmer mode on this oven - haven’t tried it - not sure I know how to do it but will find out!

    @@Got2EatPizza just press in the knob like when u turn the off the oven but instead of turning it off you rotate it slowly.

    So a lot of times, ppl will only put cheese and other fillings in the calzone while having a little sauce to dip it in after it's cooked. Looks delicious! Its getting colder in our parts but still hope to give the ooni another try this year 😊

    Hi - yes, and egg next time with ricotta I think - we get cold Winter here in Wales but not too cold to stop us cooking thankfully!! 😅

    i will try to make my second calzone in the karu 16 today i am using wood/charcoal so i cant turn down the flame the first calzone i had made was pretty good but i put some sauce on top of it so that it doesnt burn maybe i will try it without the sauce but there are pretty big flames in the karu when using wood it might not be a good idear🤔 thank you for the tips 😊🍕

    Hi - it’s a bit tricky with the flames, but if you cook it when the flame is quite low or even bring the calzone as close to the front as possible that should prevent the top from burning. Also, you could turn it over half way through the cook to stop it rising up into a bubble like mine did! 😁🍕🔥

    @@Got2EatPizza hi thank you it worked out pretty well i put the calzone in when the flame of the last added peace of wood was almost extinguished I made a pineapple calzone I hope no Italians were watching 😅👍

    As italian, put some tomato on the top. Its gonna protect the upper part during the cooking process keepin it wet, thats tradition overe here :)

    Make a small cut in the top to let the air out then it won’t puff up and e less likely to burn.

    @@Got2EatPizza you can also put the tomato sauce on the top but have to be careful not to get any on the bottom or it will stick

    Question: why is an aluminum peel not safe to use to block the heat?

    Hi - it’s due to the lower melting point of aluminium metal.

    That turned out nice but I'm guessing you know already that the burner on your koda16 can be dialled down to just a simmer flame.

    I’ve never tried that - is the egg already cooked before being put inside or raw and cooks as it’s cooking?

    @@Got2EatPizza raw. I recently cooked a calzone in my koda 12 and it looked perfect on the outside but the egg was still completely raw inside:(

    Well that’s a challenge so got to try that! The thing is - these high heat ovens cook outer dough fast, electric is slower, so I’ll try that in the Volt first and see what happens - will show on here soon. 👍🍕🔥⚡️
