    It's probably a joke, but I think the color is from the ketchup and the oil. I put sometimes ketchup on rice with meat (we make rice dishes different from asian rice dishes, so don't bully me for using ketchup)

    @@alextrified3557 ketchup is not used in the dish, my bad for wording. I just like using ketchup as a preference and since it's NOT an asian dish or something traditional, I can defend myself for using ketchup. However, if you actually want something better than ketchup you can swap ot for actual tomato sauce, it's super good. Ketchup is just my lazy way of using tomato sauce.

    Guys, ketchup in fried rice is actually pretty common in asia. If you try searching up an omurice recipe, the fried rice used in the dish usually has ketchup added. Not saying that adding big chunks of steak is normal, but the ketchup part isn't as weird as you would imagine.

    @@sm00gzbear ketchup has great balance of acidity, sourness and sweetness. It takes a good and brave cook to work ketchup as an ingredient. With right combination it could turn out great. But could very easily turn into a disaster.

    i usually take the beef out of the wok after it is cooked so it wont be overcooked, then i put the rice in the wok. and after all the rice are mixed well with the spices i turn off the fire and mixed those beef again

    Some fried rice recipes do use ketchup as an ingredient. I use them too and it taste good. Some of you are too gatekeeping. Fried rice is universal and there's a lot of ways to make it anyway.

No. This is a good steak fried rice, you can use leftover steaks and leftover rice let's say after a party, and bam, fried rice. Sweet, juicy, and crunchy greasy rice paired with a sweet juicy steak, that sounds fucking delicious.     @wongpantai bullshit! I buy nasi goreng from my usual abang-abang on the streets of Surabaya and they do use ketchup all the time for their Nasi Goreng Jawa. Been to several carts and they all use the same basic sauce.

    Have you ever know about "Saos Raja Rasa"? I'm not sure if this is available at the US Asian markets, but the closest one is Maggi Seasoning Sauce. Almost all Indonesian fried rice vendors and Chinese restaurants in Indonesia use that sauce

    @@danielstein4791 it's hard to describe. It's like soy sauce but different and it's fermented. The sauce reacts with hot oil and becomes tasty as it sauteed. Usually used in almost all or all Chinese foods that uses wok to cook Maggi Seasoning Sauce is the closest one and it has a slightly different taste

    Fried rice with ketchup is actually pretty common believe it or not, the main issue in this fried rice is how WET and SMUDGY this was, almost like a risotto....

    i’ve actually made fried rice with old rice, way better than with fresh. I have no clue why, but it seemed like the rice was almost crispy but still chewy.

    Ketchup is commonly used in a lot of Asian recipes where I’m from. Shit like the street food that is over here has majority of the recipes using Ketchup and it tastes amazing

    Was told for years to use cold day old rice. Mine always turned mushy. Found a Hiroyuki terada chicken fried rice using freshly made absorption method rice. Way better as the rice doesn't taste stale.

    We use 1 day old rice because if we use new rice in fried rice the rice will get very dry when cooking. So you should be thanking him when it comes to 1 day old rice. But not the goddam ketchup unless its omurice.

    A day old? Yes, leaving it out in the open for a day? Obviously NO. The point of leaving the rice in the refrigerator for a day is to make it not clumpy and sticky. Though, if you want it fresh, you can spread the rice on a tray for some minutes to let the moisture evaporate and take some yellow yolks then mix it together with the rice. It should have the same effect as a day old rice.

    @@birdistheword1327 Well, I provided you on how to mimick the effect using fresh ingredients. Did I ever tell you that you must eat a 1 day old rice for fried rice? You do you with your food. Also, I found out about the trick of letting it out for some minutes on a tray and coating it with yellow yolks from an Asian chef who has to cook it from fresh.
