Kaz, as a Malaysian I truly admire you for making great effort to seek out Malay food especially in remote areas. I love food, but even I don’t have your determination, which is fantastic to watch. The fact that you have no means of your own transportation, that language is oftentimes a challenge, AND you pay your own way doing it makes you my Makan Hero. This video drove home how challenging it was for you yet you never gave up. Arigato, Kaz-Chan, for loving Malaysian food, Malaysians, and Malaysia.

Basically, it is common. But Negeri Sembilan food is not commercial style like KL. They are just homemade cooking, so the dishes cooked without any plan, could be different every day. Come to Jelebu, Negeri Sembilan to experience a highland environment like in Cameron. Good food also. Actually rendang maman and sambal tempoyak are not rare u can find at any restaurant in n9 but it depends on the chef mood either the want to cook it that day or not😅 Cool fact : Negeri Sembilan is same meaning to Kyushu

For Malaysian honorifics, when you greet older man, you may add 'abang' to their names, eg: abang amir. For older woman, add kakak. This may be useful especially when you are in village or suburb areas.

Daun kayu is a combination of plenty (can be 5 up to 30 types) of vegetables, and plant shoots. To prepare it, you must slice/cut all the plant into fine, small pieces. This is really tedious work. Not to mention, that you must balance the recipe with tumeric, chillies, coconut milk, and the tempoyak to get the perfect taste. Because it is a complicated dish, not many people are willing to do. At the end, this dish become an exotic food already. You are so lucky then. 🤗

My neighbor makes very delicious rendang maman. He makes it with chicken or with beef. I personally like the beef one. Maman is a kind of vegetation with slight bitter taste. Best eaten (for me) when it is cooked as rendang cili api. For sambal tempoyak daun kayu, my mom's the best. But it is not easy to make. Had to find various types of leaves to make it and normally not easily find in cities.

She uses shoots(pucuk) from plants available around our house such as kunyit(turmeric), kaduk, guava, jering, tapioca, sweet potato etc. All this shoots will be rolled together and slice finely. Then cook it same as masak lemak cili api (but thicker gravy) with tempoyak and anchovies added into it. Cheers..

I learnt to eat the tempoyak daun ubi kayu from my roommate( who is from negeri sembilan) when i was studing in Shah Alam long ago. Ubi kayu = tapioca. Daun=leaves. Tapai is also my favourite. What the lady said is "Terung"=brinjal or egg plant.

Rendang maman is kinda unique dish. The preparation is not that simple, but an adequate taste with white rice , telur dadar (omelette with onion, chilli), and also a bit of kicap manis (sweet soy sauce). I really love the beef maman rendang. The beef is smoked using charcoal, and later mixed with the rendang maman also cooked with charcoal. The "Santan" (coconut milk) must use fresh one, not from ready-made santan, if not the taste will be slightly different . My mom is from Gemencheh, once a while when we came to our Tok Wan (Grandmother) house, she will cook it. My mom will cook in a large portion so that we can give each family members "Rendang Maman" in a plastic container. The maman vegetable itself, kinda rare in the market. In Perak, kinda hard to find it. I admire your spirit in food hunting! Gambatte! Keep up finding different unique dish!

Sambal tempoyak is common Kaz in NS..but not many restaurants make it. You can find it in The Rimba in Kuala Pilah or Lavender Heights. Also available in Pedas/Linggi. In NS, most of the people in kampung cook whatever they can find around their home. Maman, daun kayu(herbs), anak pisang, ulam, belimbing buluh, mango, bacang, nenas - these are common ingredients in our variation of masak lemak cili api. You have been to restoren Pak Abu Pedas, they had the rendang maman and sambal tempoyak daun kayu..huhu

OMG Kaz. You were in Gemencheh. I'm working in Gemencheh. There's no Grab service in Gemencheh area. Maman can be found around this area as well as up to Kuala Pilah, Bahau and Gemas. I think maman is interesting as some may not like it as those who are not skilled in cooking maman will end up with the bitter taste. Glad you were able to find the food you were looking for.
