Hello Chaimaru, curry the colour is orange- curry ayam, kari ikan, kari daging etc. Kari food basicaly influence of Indian food. If yellow is gulai lemak- gulai ikan, ĝulai daging, gulai ayam, gulai labu, gulai nangka, gulai pisang etc. Gulai/yellow soup basicaly original Malay food.

The dishes in Negeri Sembilan are usually a bit spicy. The chicken and meat are often smoked first, and the made fermented with durian, with some touch of spicy-ness from the chilies. This is perhaps different other states in Malaysia.

the dishes you eating is very spesific, need to go a special shop like aunty aini vibe to having it,bcoz its very spesific dishes to have..its not an everyday thing to have it..also,since aunty aini is located in nilai, negeri sembilan,we tend to have more coconut cream, abit more spiciness in our dishes..your husband have quite tolerate spicy when he can handle negeri sembilan spiciness..also,i think only japanese in malaysia are excited bout trying a chili/spiciness interm of tasting bud since most japanese didnt like spicy dishes ,least from the vid's i seen on youtube ..

The cat fish dish is called “Gulai Tempoyak Patin”...it’s spicy because the main ingredient is bird eye chilies which are very2 hot n spicy...add with tumeric..so that’s why it’s yellow in colour due to the tumeric.. Gulai Tempoyak Patin ( catfish) is a traditional malay dish which is common in Pahang & Perak states... In Pahang many villagers rear the Patin fish in the cages at the Pahang River... p/s- gulai is a Malay word for a dish with lots of gravy..so we have gulai curry, gulai lemak ( cocunut milk) and gulai tempoyak among others..

I personally dont like tempoyak. Even though i love durian. Patin masak tempoyak they only use a small amount of tempoyak. Usually there's just a slight kick from the sourness. I think other places outside Nilai or Negeri Sembilan should have less spicy food. Negeri Sembilan is famous for spicy food (i.e. Masak Lemak Cili Padi, it's a spicy yellow gravy made from tumeric, coconut milk, and lots of spicy cili padi that is usually added to any meat, seafood or vegetable dish) I am warning you to be very afraid (i had bad diarrhea the next day 😢). Bird's Eye Chili = Cili Padi, the small extra spicy cili you see at the wet market.
