    The "burning" is crucial. In Germany we call it "Röst Aroma" means the flavor you get from letting it get slightly "burned" but not "burned like going up in flames" 😂 Actually these stews taste best when they are warmed up the next day

    My Bavarian great grandmother also taught me a way to soak the beans, and dry toast them, dry with herbs and seeds in a hot iron pan before adding water for the cook-down even is commenced

    One of the few non Indians with the correct explanation for the type of daal used in this Indian recipe and the soaking technique. Red masoor is one of the easiest to cook and may not even need soaking. Thanks for being authetic, chef!

    This is the biggest reason why some of my friends and family don't want to try vegan food, they have to prepare it! They get fast food, convenience food, or just a hunk of meat because "easy" but the problem is they are all starting to also see the health impacts - heart disease, cancer, excessive iron in the blood, inflammation and IBS. I'm hoping to do some sort vids for my family for Veganuary and I'll be making some of Andrew's recipes for sure! Thank you ❤

    I went vegetarian shortly before thanksgiving…I haven’t looked back. I feel better…and I’m no longer responsible for any animals being hurt, which was my main reason for making the change.

    @@reasbeyhi! it is definitely progress to not consume any meat anymore and being vegetarian but claiming to not be responsible for any animals being hurt is simply very wrong :/ the dairy industry is extremely horrendous (i'd suggest you read into it!), as are other industries ofc. But props to you for taking the step and becoming vegetarian :) Hope you are still feeling as good as you did when writing that comment.

    @@reasbey Being vegetarian is actively harming animals by consuming by-products which keep animals in factory farming. Claiming you are not harming animals is inaccurate. Veganism and vegetarianism are not the same.

    "According to a bean scientist I talked to, cold-soaking beans does nothing to remove those sugars and even hot-soaking (the so-called “quick-soak” method) doesn't reduce them by enough to make a difference. You'd have to hot-soak repeatedly to get rid of an appreciable amount." LA Times

    I love your recipes and especially your love for life (the "good"), flavor and nutrition. Timely recipe! I just spent a lot of time scribbling notes on what I did to make a homemade coconut spinach dal recipe duped from [rhymes with Mole 'Tudes] less salty, more fresh and more delicious/spicy. I also looked at a lot of Indian chefs/KZreadrs for inspiration. This is the first time I have ever learned about the benefits of pre-soaking red lentils and I am so grateful!     Thank you SO much for mentioning that Roasted Peppers could be substituted for Tomatoes - my family has an allergy to tomatoes, so we are always struggling for substitutes for tomato paste, tomato sauce, and tomatoes. We can make mushroom catsup to substitute for ketchup, but looking for substitutes for other issues. We know we can use tapioca starch instead of corn starch and cane syrup or simple syrup for dark or light corn syrup to deal with that allergy, and appreciate the tips on getting creamy textures without dairy, as corn and dairy are also allergies here. Thanks for all your tips!

    Pro tip: get sambar powder. Just add in your washed lentils + veggies of your choice + 2 glasses of water + 2-3spoons of sambar powder + salt. Add lemon at the end, and you are done. Try to steam your veggies and that gives a completely diff flavour

    Man I been eatn lentil 4 about tha las 2 & uh half weeks since I got yer las lentil recipe wit tha 4 onions in it. I use 2 only use 1 onion, now I can't stop usin 3 or 4 onions. I also make em wit jalapenos, tomato paste, soy sauce & uh lil Zatar... I'm addicted! ✊🏽😁❤️

    I made this. It tastes just like you’d expect a good Indian Dal would taste…delicious. The recipe is right. I will make it kind of often. I think it’s so easy you could make a veg curry to have with it for more variety on your plate. Good for making ahead to eat on work nights.

    Looks lovely, 4 things I would do differently - 1. use spanish onions, 2. add tomato after onions turn brown followed by salt, 3. add spice after tomato is cooked and oil separates & 4. add coconut milk after the dal is cooked and let it come to a boil again.

    Thank you for sharing. I LOVE lentils. I usually eat 5-7 meals a week with a main "base" of lentils. We have been "stir frying" with tumeric and ginger root. I wonder if you have considered adding some grains, like farrow, quinoa, or rice? I am way under 1:1, perhaps even 5:1. Looking forward to trying this recipe. (My other mainstays are chick peas, black beans, and kidney-what I can get dry in bulk, though lupine, for a snack, were a 25+ day ordeal.)
