Macaroni and cheese is such a classic dish and can be made in lots of different ways with lots of additional extras to take the flavours to new heights. In this one, bacon is cooked down to render the fat and the remaining ingredients are then cooked in that fat to create the most beautiful flavour. I hope you enjoy it and thanks for watching!

Serves - 6 To 8
Ingredients -
300g (10.5oz) - Streaky or Back Bacon, Large Diced
2 tsp (20g) - Dijon Mustard
10g (0.3oz) - Thyme, Roughly Chopped
5 - Garlic Cloves, Finely Chopped or Minced (Use 4 Cloves)
1 1/2 Cups (375ml) - Chicken or Vegetable Stock
300g (10.5oz) - Macaroni Pasta
2 1/2 Cups (625ml) - Full Fat Milk
1/2 Cup (125ml) - Thickened Cream (Substitute for Full Fat Milk)
1 1/3 Cups (330ml) - Chicken or Vegetable Stock
50g (1.7oz) - Plain (All-Purpose) Flour
200g (7.05oz) - Cheddar Cheese, Grated & Divided
5g (0.2oz) - Flat Leaf Parsley, Roughly Chopped
Seasoning To Taste

This looks amazing, and I can almost smell that bacon! I love that you added the 20 cracks of black pepper to the top. I could hardly make it without my 2 pepper grinders-one for black pepper and one for white.

My Gran's baked Mac n Cheese with tomatoes has been going for 4 generations amongst our family. Cook Macaroni melted cheese tin of crushed or chopped tomatoes chopped fried bacon some fried onion basil milk. Bake at 350F for 1 hr. Last 10 min remove lid to brown top.Mmmmm!!

Appreciate the feedback! I need to remember that garlic is stronger in other countries than it is in Australia. I could literally put 20+ cloves in this and it wouldn’t be overpowering. I’ll make a note in the description. Out of curiosity, did you use fresh cloves and were they chopped or minced. 🙏

Sooooooooo good Jack! I’ve got a similar recipe which also includes half a finely diced onion but no garlic. I can recommend sieving the flour to make sure that your final mix is lump free. Thanks so much for sharing. I will definitely be giving this recipe a go! Cheers from AKL.

Hi Jack just to let you know I cooked this yesterday and it was ok not as good as yours but ok but I put the left overs in the fridge and now I heated some up again in the microwave and shredded red cheddar and sprinkled it over it and microwaved it again for another minute to melt the cheese and just eating it now and must say it is 100 times better eating it the second day like stews when it matures over night the stew is always better the next day. Thanks a million for your great help. I'm going to make more during the week just for freezing in portions

The brand new apartments in Canary Wharf have Miele induction cooktops (in amazingly spacious kitchens with high rise views). Can you freeze this and for how long. I'm trying to cook extra things and freeze some because sometimes I can't leave home for days as weather is too bad at times for my mobility scooter so I need to freeze some things to keep me going at times thanks and keeping it simple is great for older age people with medical problems like me

Oh you poor thing burnt your mouth... ouch TT_TT ... I wouldn't risk getting myself burnt no matter how delicious the food looked and is really delicious. Do be careful Chef! The cheese maniac I know I am I'd be adding more cheese and they would be of different kinds... abnormal love of cheese. No not at all. You can sieve it to make sure but if it’s well mixed it won’t clump. The reason it’s not done prior is because it’s a one pot dish. If we add it before the other ingredients won’t be able to sauté properly

GLUTEN FREE - I used this recipe and it was delicious however, with the gluten free version of macaroni it does need a little longer to cook. I’ll be using this one again. Thank you 😊

Would you not want to a. Clock that flour out? And B. make a slurry with the flour first to avoid the clumps? For a professional chef this would be basic culinary training oui?

The flour is cooked out and its smooth. You can make a roux before hand but we’re making it while everything is cooking together
