This week’s Big Little Recipes features a blueberry buckle that’s buttery, moist, and bursting with berry flavor. INGREDIENTS
1⁄2 cups (1 stick/113 grams) unsalted butter
1 cup (125 grams) self-rising flour (see Author Notes)
1 cup (200 grams) granulated sugar
1 cup (240 milliliters) whole milk
1 teaspoon kosher salt
1 cup (150 grams) fresh or frozen blueberries
Vanilla ice cream, for serving

    Blackberries would be a great substitute here! BTW, can you use buttermilk instead of plain milk?

    @@BIgDaddyJ62 Thanks so much for your question Jaymes! With buttermilk because of the acidity, it may have a different effect on leavening agents in the self-rising flour, though it could be worth a try! Vallery also mentions in the video that you can swap-in a plant-based milk as an option. Blackberries sound absolutely delicious!

    i think one could reduce the sugar by half a cup, and a little less butter wouldn't harm nobody as well - but in terms of easy it's a quick recipe to throw together :)

    I have a ton of blueberries in my freezer. Thanks neighbors. 😊 I’m terrible at doubling recipes. I always over or undercooked and screwup the liquids and eggs ratios. How should I double this recipe and should I bake it in an 8x8 and how long should I bake it for in the 8x8 if I do? Thank you in advance.

    An 8x8x2 should work. It normally allows for 8 cups of batter or two loaf pans. If you’re going to double it, I’d suggest a Bundt or tube pan. I often use a Bundt to substitute for a 2 loaf recipe. To double it just use: 2 cups SR flour 2 cups Sugar 2 cups Milk 2 teaspoons Salt 2 sticks of Butter 2 Cups of Blueberries Personally I’m gonna add a teaspoon of vanilla and use half cream/ half milk.     If you are using Morton's kosher salt you need to half the amount.

    I would put a layer of blueberries on the bottom of the pan before pouring in the batter. Just because.

    It looks delicious and I definitely would like to try it. But, when showing people to bake you really should use the correct measuring cups. You never measure milk in a dry measuring cup always use a liquid measuring cup for milk

    I'm pretty sure she did that on purpose to show how simple the recipe is and how few dishes it requires. When commenting on people's work, you really should take the time to listen to their method. You never assume that somebody who is presenting their own creation is doing it wrong.
