Olive time!!

5-6 week process that I usually do, aunty Carmel told me “ boil the water and pour over the olives.
Wait till the water is cold, drain the olives. Dress the olives with salt (lots), garlic, chillies & oregano.
Toss them every day for about 10 days ( might need longer). On the 10th day, taste them and see if the olives are no longer bitter, place them on a tray and let them dry in the sun for a few days”. At this point you should be able to plate them up with some olive oil or you can jar them and freeze them in packets. Take them out as you need them. They will keep in the freezer even till the next season.
