If you squeeze it through a linen cloth before you put it in the sausage press you can get all the excess fluid out without compromising the taste. maybe an idea for next time

I watched someone put salad on top of their Fettuccine Alfredo the other day. It’s questionable, yet efficient
Maybe for wet sausages, try adding a little besan (chickpea flour) to the wet ingredients. When it cooks, it solidifies like an omelette/quiche, and it takes on whatever flavor you season without imparting hardly any of its own.

@@OrdinarySausage Glad to be of help! A little goes a long way. Something like 1-2 tablespoons per cup of sausage mix. Err on the side of too little.

@@sliceofbread2611 Easily explainable: It absorbed most of the moisture, plus the amount of greens made it so it's still a very fresh mouthfeel. Just look at the consistency when he's poking it; it's like mashed potatoes.
Watching this back-to-back after Babish today was perfection. He wouldn't know an overly dramatic chop if it cut his sausage in half.
If this man doesn't know his audience, I don't know who does

There's probably a ratio for it. Like percentage of body mass? "A quarter of your weight in bread sticks" sounds about right.

According to Babish's most recent episode, "an over stuffed sausage" is the prime cause of bursts. And we see him stop stuffing the sausage with plenty of casing, and then "evening it out" before cooking it. If you still want to collab, you might want to try that out.

You could alternatively cook the inside first and let the mixture of water steam out while keeping the flavor and then let that cool down and then put it into your sausage casing so that it is less mushy and then cook it in one of the 4 ways of pan searing, boiling, baking, and smoking.

for the mush factor: the inside will bake faster if it's hot. fridge-cold casing+warmed up innards? maybe try throwing it in the oven that way, before the stuffing can heat the cold casing?

You have to add an egg yolk to any super mushy sausages to bind it and make it less likely to burst or stay mush
my theory on the burst is since the sausages skin shrinks with heat and since you poke it you give the filling a way to burst out so it expands out from that poked area and makes a burst so try to understuff them a bit

maybe you should try throwing the goop and gunky (mushy) fillings in the dehydrator for a bit before stuffing it in a sausage. Just enough to where it's not too mushy but its not too dry either

Apologies in advance for the trauma dump, but this year is my first Christmas without my Grandmother and so far i can't lie, it's been tough. It got to the point where I'm struggling to even get through the day without crying, so i thought i would jump on youtube to try and mentally escape for a little bit and at least calm myself down, which led me here. He did a caesar salad sausage before which is a little more "pure" lettuce. If I recall correctly it did not get a very good rating
i cant believe i just did a deep dive into the history of dean martin just because you sang thats a sausage
For the future you should strain your more watery mixes, applying a little pressure in the strainer
fried chicken breaded with fruity pebbles/chocolate pebbles. maybe with some crushed up as a binder for the big pebbles
I want to see mr sausage as a contestant on chopped, or as a close second I want him to take an episode of chopped and just make a sandwich for each course's ingredients and a seperate sauage out of each courses sausage
