OLD SCHOOL SMOTHERED LIVER AND ONIONS/MULTIPLE SUBSCRIBERS REQUESTS THE LAST FEW MONTHS

OLD SCHOOL LIVER AND ONIONS ( mushrooms)
This is another thing that either you like or don't like
It's something I always ate growing up in the country
Recipe
1 pound calf or beef liver
1 cup sliced onions
1 cup sliced mushrooms (optional)
Salt and pepper
1 cup whole milk
1 cup beef stock or water
Soak liver in milk for 2 hours ( it kills the bitter taste of the liver )
In skillet Saute onions and mushrooms until soft
Remove from skillet
Season and flour liver and brown in skillet
Add onions and mushrooms and 1 cup beef stock or water
Cook an additional 10 minutes
ENJOY!!!

    My mother would fry bacon first, then the onions, then the liver in that order. In the same grease. Nothing more delicious than liver and bacon and the caramelized onions in the same bite. That was the only way she could get us kids to eat liver.

    yep, that's the way we had it too.. the bacon grease was from an old coffee can on the stovetop. I can actually "smell" the memory of this as he's cooking this. It's called Phantosmia" or an olfactory hallucination....

    My mama tried, but that's when my daddy and me and one sister went out and had Tex-Mex while my mama and other two sisters had the liver & onions. After that I never had to contend with it. If mama cooked liver, me and daddy and the one sister went out.

    Yum that sounds good. I’ve been been a liver lover I wish I was. I’m actually making it though for my mother and grandmother today because they love it. I do love the smell of it cooking. Maybe now that I’m older I’ll try it again. As a kid it’s gross lol but as an adult your taste buds change and become refined.

    I grew up with mama cooking liver and onions for dinner but I was a kid who was a picky eater and never ate it. Liver is rich in iron and most women are iron-deficient when they become pregnant and liver is one of the iron-rich foods recommended to eat. I was in the Air Force stationed in New Mexico when I had my daughter and there was an "old-school" cook at the base NCO club who cooked a lot of old-school food including liver and onions for lunch every Wednesday. I decided to try it one Wednesday and discovered I loved liver and onions! From that point on, I'd have liver and onions for lunch every Wednesday during the last 3-4 months of my pregnancy. I haven't had liver and onions since those days but oddly enough even though I never cooked liver and onions when she was growing up, whenever I go out to dinner with my daughter she'll order liver and onions at the (rare) restaurants that have it on the menu! My one and only child turns 40 tomorrow and I've been in a reflective mood all week. With this dish, you brought back a sweet, precious memory from long ago.😊😋👍❤💯

    That's like me. Liver onions looks so delicious but I can't eat the liver. I just don't the taste of it. Same thing with deep fried chicken gizzards and chicken livers.

    Let me tell you something, first let me say thank you, I was one of your subscribers who requested this video, I missed out on a lot of my grandmothers recipes, so you’re the next best thing, and I swear you never disappoint, secondly Chef, I haven’t had liver since my youth many many many moons ago, and vowed to never put it my mouth again, but as I’ve gotten older/wiser, I’ve come to realize that the grossest tasting foods are the most healthiest and beneficial for your body, so last week I tried your recipe to the letter, and as overzealous as I always am, I had my fire up too high and my liver came out slightly leathery, completely my fault, but that gravy, oh my goodness that gravy saved the day, me and my son ate it all up, and I’m sitting here now about to make it again, I learned that it’s so nutrient rich that you should only eat it once a week, I just want to say thank you for all you do, because you’re making a cook outta me yet. May you wake every morning renewed and energized by and that your sleep is sweet every night, and May the Good Lord continue to bless you and keep you, in Jesus name.     Oh my stars! I am a misplaced Texan. I guess I’m actually not misplaced. I now live in Tennessee. But you mentioned Lubys! When my godfather wanted to go grab lunch that is where we went. I was born and raised in San Antonio. So that memory of Lubys took me way back. I lost my godfather last year when he was 101 years young. But I will never forget all the lunches I had with him going there and getting my liver and onions or the fish if it was Friday during lent. Thank you for such beautiful memories. And thank you for the recipes you provide. It’s a little taste of home. But I will be honest, I’m mostly miss Tex-Mex and tamales. God bless you.

    great recipe.....i love liver and onions and have done all my life...my mom and i were the only ones in the family of 6 who liked it but my dad was a butcher and we had it when ever we wanted - same thing with chicken livers and gizzards...it really reminds me of home 60 years later.

    Good morning Chef Jeffrey. I remember back in the day I use to pinch my nose, hold my breath, take a bite of the liver, and flush it down with a few gulps of water 🤭😂!!! That's how much I hated it 😁🥴!!! I did that same routine when we had peas and greens. My mother wouldn't let me leave the table until I had eaten every bit 🥴. Although I'll eat peas today I'm still not that fond of them, but I love me any kind of greens. As an adult I'm the only one in my family who even eat liver so I didn't cook it often. Matter of fact, I just cooked some last weekend with cabbage that had smoked turkey necks and sausage with cornbread on the side 😋. But, it'll be another while before I cook it again because liver and my tummy just don't get along too well any more 😁🤭. I just wanted to appease my desire bcuz it had been a while since I've eaten any. Enjoy your dinner with all that goodness 😉😊. Have a great day! Thanks

    Hi chef Jeffrey, liver and gravy was one of my mom’s go to meals. It was 9 children plus dad so liver stretched far. She only used beef liver and she would use gravy master for the browning of the gravy. 👍👍👍👍

    I Love liver and onions, but don't make it that often. The last 2 times I bought beef liver at Wallyworld it only came frozen in a vacuum sealed bag, after defrosting it as I took it from the bag it was total mush, completely unusable! I've Never had that happen before in 40 years, albeit a different grocer. Then again, the liver I used to get was in tubs and not frozen. Sadly, I haven't seen calves' liver in many years, which I used to buy and prefer. Thanks for posting this recipe! I've binge watched about 8 of your videos tonight, along with quite a few over the last month since I discovered your channel, so I had to subscribe. Thanks again for taking the time and making such great videos.

    I couldn’t find any wings to try your buffalo wings recipe, so I just cooked this. It’s good! I never flour my liver; just prep it, place it in the oven, then add it to a skillet of gravy.

    Back in the 80s, early 90s there use to be this club called Faces in DC that made the best liver and onions. They didn’t smother it in the gravy but covered it in caramelized onions and bacon! I made some about a month ago, may have to do it again soon.

    Hi chef, I don’t like liver however when I was pregnant with one of my kids I ate it at least 2 to 3 times a week and loved it🤷🏽‍♀️ as soon as I had the baby and I tried to eat it I didn’t like it again😁. My sister loves it so I’m going to try your recipe and cook it for her because that looks really good and I may try tasting it and see if I like it again. Thanks for sharing have a great day‼️😊

    Hey Chef Jeff, this is one of my all time favorites that I dearly love and have since I was a tiny child. My granny would make the smothered liver and onions and a big pot of rice, sometimes creamed pots, and hot biscuits. I cook beef liver and chicken livers like you do.
