You should use a mandolin for the onion. Even thinner strands. Incorporates, caramelizes and tastes better.

That's a great tip. I try to slice as thinly as I can but I might have been a bit clumsy here. A mandolin might be a good investment. 👍

You are close BUT El Reno onion fried burgers have yellow mustard or ketchup for sauce only. Sliced pickles. No toasting of the bun. American cheese if needed. Lettuce and tomato if needed. You wont find much else at Sid's or Robert's.

Thanks for the pointers! I really like a DIY burger sauce on these, but I'll try a squirt of yellow mustard next time.

No, fried onions go in soup 😁 kzread.info/dash/bejne/iWaAzNOpj6yocco.html I don't like to have black and white opinions when it comes to cooking. If the flavous work, they work. You do you though. 👍

You can see that the onions got burned during the assimilation, because you squash them with the burgers they arent cooked evenly. I would recommend cooking the onions seperate first until well caramelized, put them somewhere seperate and then cook the burger in the same pan (without rincing the pan ofcourse). Then assimilate everything and you have a beautiful burger with evenly cook onions

That would give you more consistent caramelisation, yes. But for these burgers I find the unevenness of the onions adds a variety of textures and flavours and a little charring is kind if nice. If you prefer them evenly caramelised that's fine too though, and your suggested approach should achieve that. 👍

Yes i admit i don't know what an oklahoma burger is, i didnt know the squashing of the onions with the burger is what makes it an oklahoma burger but i did a little bit of googling. I was just sharing my opinion on how i think it could be better. I might try it myself according to the original recipe just to taste the difference but i am still convinced that caramelizing the onions evenly would be more reliable and brings out the flavour better. Personally i dont like food that is a bit burned or undercooked but everyones taste is different ofcourse, and my point isn't to tell people that you should cook your food only in a specific way. Either way i still like the video👍🏻

@@axevdd What you think looks "burned" is not - it's just *some* of the onion that's more fried/crispy. Then there will be some of the onion that is caramelized, and some that's even less cooked. That's the beauty of it - you get the onion in all it's many, delicious states, and a lot of it smashed into the burger, making it more juicy and adding flavor TO the meat. If you just put caramelized on top of the meat after it's cooked, you will lose ALL of that.

They're burned, which isn't a huge deal actually, but definitely don't bother cooking them separately. Instead add them right before flipping the burger.
