My parents never really taught me to cook but I have been following since I first started cooking for myself as a freshman in college. Now I have a graduate degree and a professional job. I still go back to the recipes I learned then! The staples of Korean cooking have become some of the staples I go back to as an American. Chamchi-kimchi-jjigae is a dish I have gone to countless times when I just had tuna and leftover kimchi in the fridge lol. Thank you so much for sharing your culture with us, it makes the big wide world a little more accessible and closer to us from other countries

It’s rare that a person can be a national treasure but I think this one should be classified as World Treasure. We have prepared numerous of her recipes exactly as shown and they are treasures in their own right. My advice to anyone preparing her recipe is follow it exactly. Do not change a thing.

Hello Maangchi & everyone here! love this recipe, not oily but healthy. I replaced the fish cake with soft thick tofu skin. It was so yummy. And the sauce I followed Maangchi recipe 100%, it was so great! Thanks Maangchi for your awsome fish cake noodle soup!👍👏

I replaced the anchovies with dried shrimps for the stock when I tried cook it for my daughter because I was running out of anchovies, but it was delicious, too!

Thank you very much for your nice comments and messages! Check out English and Korean caption! 영어, 한국어 자막있어요. By the way, KZread ended the community captions feature a few months ago, so my volunteer viewers can't submit their captions in their languages anymore. I do English and Korean captions by myself because I know those languages. The translated captions already made will stay on my videos. I hope someday KZread will have community captions again.

I love that you always give information on vegetarian substitutes whenever you can in a recipe. It's very thoughtful and helpful!
This is my favorite noodle dish. It brings me back so many fond memories of my mom taking me to the bunsik restaurant everytime after my afterschool class. She always ordered those noodles 😭😭😭 thank you maangchi!!

I’m part Korean and I must say that I make fish cake dishes once every week. You can make so many varieties of Korean fish cake dishes. It’s not expensive and feeds my family for days. My grandchildren love it!

That sauce is SOOO yummy - I've become a bit addicted and put it on lots of other dishes - cold noodles, omelets, instant ramen....It keeps well, and I think gets even better after a couple of days. Thanks Maangchi!!

For vegetarians, you could replace fish cake with inari tofu pouches! I think the texture is pretty similar. Add some seaweed to give it that oceany flavor!

Inarizushi pouchis are often made with dashi, and thus not vegetarian when store-bought. You can sometimes find the precursor, abura-age, or make it though :) Also the canned inari would probably be too sweet for me in this dish.

@@tourmalineKey If you are shopping for a vegetarian, read the package on everything Japanese... Dashi goes into so much you wouldn't expect.
Might sound weird but I love how you eat the food. It makes it seem even tastier with how you take big bites and slurp the soup lol

*After marriage, I always have fish cakes in my freezer. Of course, Noodles! as well. Sometimes we need late night snacks. Most of Korean housewives may agree with me. Much healthier and more delicious than instant Ramen! Thank you for this happy recipe. I love Mangchi’s version!* 👍😊

I have never cooked so many times the same dishes as I do with Maangchi’s delicious recipes. This soup is absolutely Devine..for low carb version I used Agadashi tofu instead of fish cakes ( which contain sugar and glucose), I also added thinly sliced Zucchini and carrot to the broth..thanks Maangchi, you’re the best👏👌

I have been watching since 2018 and i learned a lot from her recipe. Today i made radish side dish and followed her recipe. This recipe in this video is another awesome recipe to follow.
For vegetarian version, I used to grind Tufu and made tufu balls for soups or hot pots with a lot of added spices and some starch to make the tufu sticky enough so that the balls will hold up ( if there is a good seasoning with fish or shrimp taste that is somehow vegetarian friendly that would work well.)

Maangchi, I'm vegan and your recipes are so inspiring! I've never had a problem figuring out how to replace certain things because you always use fresh, whole ingredients. You give me a reason to be creative! There is a brand called "oceans halo" that makes organic vegan and soy free 'fish' sauce and 'soy' sauce for anyone interested. I really want to try and make this dish with tofu skin or something instead of fish cakes. Looks SO GOOD😍

I would suspect Aburaage would do a good job of mimicing the texture of the fish cake for a vegetarian option. Its simmered in broth like this one to make inarizushi, so it should hold up here too
Tofu skin can replace fish cakes... tastes good!
I’ve made a couple dozen of your recipes, and they’re all delicious, but this one is my new favorite by far! I was basking in the afterglow for hours. Mmmm, so good.
