• 1 qt. / 450 ml. heavy cream
• 1 vanilla bean (I used vanilla extract)
• 3 oz. / 84 g. granulated sugar
• 5 egg yolks
• 3 Tbsp. / 42 g. brown sugar
• zest of 1 lime
• juice of half a lime

    If you put to mutch limejuice in it will get curley and will seperat. The nice thing is that you can flavour your Creme brulee with almost anything. I like a cinnamon and suger mix on top and some anise to flavour the milk.

    Thanks! One tip though, I wouldn't whisk as hard. That's why I got all those bubbles. Which weren't bad, but can be avoided.

    yay! just when you think it can't get better than wine soup, here's dessert. Hey, just a note (not to dis any infamous chefs) but I used to make a raspberry clafouti in a toaster oven. It was Eric Ripert's recipe for the cuisinart toaster oven. Perfection! Might still be surf-findable online! Best regards,

    Correct me if I'm wrong, but I seem to remember from an episode of 'Bake Off' that adding acid (from the juice) will make a custard curdle. Might be why yours split? Still sound's freaking delicious to me, I love/love key lime pie and my "last meal" desert would be crème brulee. Gonna try making this myself, thanks for the idea, Mitch! But rather than using the juice, I'm gonna try infusing the zest of 2-3 limes in the cream when bringing it to a boil, then straining it.

    Oooo you are wiser than me my friend. The acid could definitely curdle the cream now that I think of it. Please lmk how she goes for you!

    Yup. As soon as it was added, I cringed because I knew it was going to curdle. Kind of a rookie mistake. That's why you stick to the lime zest instead.

    Another great one Mitch. But I'm really looking forward to that Cassoulet video, it's the one dish that I never had at Les Halles that I really wish I had, and I've never made it either. And remembering the sounds of the kitchen yelling "Onglet, Onglet, Cassoulet"! Calling out the in-coming orders. It all seemed so crazy at the time...

    Crème brûlée seems to straddle the line between fancy and understated and I love it. I feel like it’s a good dessert to have for people you want to impress, but don’t necessarily want to go to a lot of trouble. Also, I didn’t realize this until I had you directly in my ear. You should do audible, and tell me a bedtime story. Haha Voice sooo smooth! ❤

    This video was very well timed! I've been toying with the idea of making Creme Brulee but have been pretty nervous. Oh yeah, I also need a torch. I have a Ryobi heat gun but I don't think that would do the trick lol! Any gotchas you came across when making this?

    Glad you found it helpful. As for the tips. Don't whisk the mixture as much as me. It'll get you those bubbles that some find unappetizing. Also as for the custard, you def want a nice jiggle when it comes out. Mine I think could have went a few more minutes, but maybe experiment with taking them out at diff times. Cheers
