[No Music] How to Make Matcha Dorayaki (vegan/gluten-free)

Ingredients: makes 5 small dorayaki
For the adzuki bean paste (Tsubu-an)
150g adzuki beans
100g beet sugar
a pinch of salt
For the batter
150g rice flour
30g beet sugar
2g baking soda
8g matcha
150g plant-based milk
20g mirin (optional)
Instructions:
1. put adzuki beans and water into a pan and bring to a boil. drain hot water then add water and simmer for 30 to 60 minutes until they softens
2. add beet sugar and salt. keep simmering until water is almost gone.
3. put all the ingredients for the batter and blend well. let it rest in a fridge for 30 minutes.
4. cook the batter on a pan both sides.
5. sand the adzuki bean paste with the cakes.
6. Enjoy!

「材料」小さめどら焼き5つ分
小豆 150g
甜菜糖 100g
塩 少々
米粉 150g
甜菜糖 30g
重曹 2g
抹茶 8g
プラントベースミルク 150g
みりん 20g
「作り方」
1、小豆と水を鍋に入れて一度茹でこぼし、新しい水を加えて柔らかくなるまで30~60分ほど茹でます。
2、甜菜糖と塩を加えて、水気がほとんどなくなるまで煮詰めます。
3、どら焼きの生地の材料を全て混ぜ合わせ、冷蔵庫で30分ほど休ませる。
4、フライパンで生地を両面焼きます。
5、粒餡を挟んだら出来上がり!
6、エンジョーイ!

    I think he explained years ago about this in one if his video. He does measuring out of camera. He puts the ingredients on the scale, looks at the weight, takes the required amount and then looks at the rest. the difference between the initial and final weight, that's the amount he uses

    Putting mirin into pancake batter isn't something I would've thought to do before, but now I have a way to use up all my mirin bottles sitting in the fridge from sushi rice attempts lol.
